心形"钟无艳"奶油蛋糕 Double Flavor Heart Shape Butter Cake


材料Ingredients:
自发面粉 200g self raising flour
黄油 250g butter
幼糖 180g sugar
鸡蛋 4 eggs
可可粉 1 tablespoon cocoa powder
淡奶 3 tablespoons evaporated milk
香草精华 1 teaspoon vanilla essence
盐少许 a pinch of salt

先将油和幼糖以快速度搅拌至松白
然后先将鸡蛋稍微打发
分次的用汤匙以每次二汤匙的蛋液加入已经打好的奶油和糖内
再以快速度搅拌至松白
加入淡奶搅拌均匀
 之后再分次加入过筛的粉以慢速度搅拌均匀
把蛋糕面糊分成两部分
一部分加入可可粉拌均
将原味蛋糕面糊倒入心形烤模的一边
然后将可可粉蛋糕面糊倒入心形烤模的另一边
放入烤箱以180度 烤大约40-50分钟
竹签插入蛋糕体,拿出不沾黏,即熟透
cream the butter and sugar in high speed until fluffy and light
beat the egg lightly 
add in 2 tablespoons at a time of beaten egg 
into the mixture & cream in high speed until fluffy
add in milk and cream well
add in sifted flour slowly and mix well
divide the mixture into two portions
one portion add in cocoa powder and mix well
scoop in the cocoa powder mixture into 
one side of the heart shape baking pan
scoop in the original mixture onto 
the other side of the baking pan
bake at 180C for around 40-50 minutes

柠檬愤怒鸟 Lemon Angry Bird Cookies

材料Ingredients:
300克 低筋面粉 300g low protein flour
40克 玉米粉 40g corn starch
150克 无盐奶油/牛油 150g butter/margarine
80克 糖粉 80g icing sugar
柠檬汁1汤匙 1 tablespoon lemon juice
柠檬末(取自1粒柠檬) lemon zest (from 1 lemon)
 红色素 red colouring


牛油和糖粉以搅拌器打至松发
加入柠檬汁柠檬末拌匀
慢慢加入筛好的低筋面粉和玉米粉
把面团分2份,一份加入红色素
另一份保持原状
滚圆,捏出angry bird的样子
加入原状的面团,装饰眼睛,喙和眉毛
预热烤箱,将angry bird饼干烤盘里,以160烘20~25分钟
with the electrical mixer beat the butter and icing sugar 
until fluffy and light
add in lemon juice and lemon zest mix well
gradually add in sifted flour and corn starch and mix well
divide the mixer into two portions
one bigger portion add in a few drop red colouring
roll out and form the angry bird shape
decorate with eyes, mouth and eyebrow
bake in preheat oven at 160C for 20-25 minutes

绿茶黑芝麻面包 Green Tea Black Sesame Buns

材料Ingredients:
高筋面粉 350g high protein flour
幼糖 30g sugar
酵母 11g dry yeast
盐少许 a pinch of salt
冰水 190ml ice water
绿茶粉 1 teaspoon green tea powder
黑芝麻 2 teaspoons black sesame seed

高筋面粉,糖,绿茶粉黑芝麻
及酵母一起混合
慢慢加入水,搅拌面团,
将面团搅拌至光滑及有弹性,
用大盘盖着发酵1-2小时或双倍大
将面团分成8份,揉成圆形状,松弛20分钟
将面团形成你喜欢的形状
排在已扫牛油的烤盘上
发酵40-50分钟或双倍大
刷上淡奶,洒上黑芝麻
预热烤箱190度烘烤13-15分钟
add all high protein flour, shortening, sugar, green tea powder,
black sesame seed, salt and yeast into the mixing bowl
slowly add in water, beat to form a dough
remove the dough and cover with big bowl 
and let rise for at least 1-2 hours or double the size
divide the dough into 8 portions
round the dough into ball shape
and rest for another 20 minutes
roll out the dough, form the shape you like
place in the greased baking pan
let rise for 40-50 minutes or double the size 
brush with evaporated milk, sprinkle with black sesame seed on top
bake at 190 for about 13-15 minutes

黑豆豉辣椒蒸马友鱼 Steamed Spicy Black Bean Ma Yau Fish

材料Ingredients:
马友鱼 ma yau fish
黑豆豉2汤匙 2 tablespoons black bean paste
生抽1茶匙 1 teaspoon soy sauce
油1汤匙 1 tablespoon cooking oil
辣椒丝 sliced chili
姜丝 sliced ginger
香葱 sliced spring onion

把黑豆豉,辣椒丝,姜丝,香葱放在马友鱼
淋上生抽及油
大火蒸7-8分钟(看鱼大小)
place the black bean paste, sliced chili, ginger & onion on top of fish
add in the cooking oil and soy sauce
steam with high heat for about 7-8 minutes
(depends on the size of the fish)

干煎猪肝 Pan Fried Pork Liver

材料Ingredients:
豬肝 200g pork liver

蒜末 minced garlic
胡椒粉及盐少許 pepper and salt 
调味料: 五香粉半茶匙, 太白粉半茶匙,  蚝油半茶匙,
白砂糖半茶匙,  生抽半茶匙,  绍兴酒少許, 麻油少許
Seasoning: 1/2 teaspoon five spice, 1/2 teaspoon corn starch,
1/2 teaspoon oyster sauce, 1/2 teaspoon sugar
1/2 teaspoon soy sauce, 1/2 teaspoon Shao Xin wine
1/2 teaspoon sesame oil

豬肝洗净瀝乾切片
再把豬肝片與调味料混合均勻
以热油煎調味好的豬肝片
煎至5-6分熟即可
clean and dry the pork liver, slice to thick slices
add in all seasoning to marinate the sliced pork liver
for at least 2 hours
pan fry the marinated sliced pork liver with some oil
fry until medium well will do

小动物红豆沙包子 Mini Red Bean Buns

材料Ingredients:
包粉 300g bau flour
干酵母 6g instant yeast
发粉 5g baking powder
糖 40g sugar
温水 120ml warm water
红豆沙(揉圆粒状) red bean paste (make round ball shape)

把所有材料放入搅拌盘混合均匀
慢慢地加入水搅拌至柔软和光滑的面团
待发至少30分钟
揉成长条状,切成10小块,弄圆待发20分钟
然后弄平包入红豆沙, 包成包子或小动物形状
待发30分钟,用大火蒸15分钟即可
mix all ingredients together 
add in water slowly and knead/beat well 
to form a soft and smooth dough
rest for at least 30 minutes 
roll dough into long strip, cut into 10 small pieces
roll it flat, wrap in the red bean filling
make into bau shape or animal shape
leave to rise for another 30 minutes
steam over high heat for 15 minutes

烧蚝油生菜 Lettuce with oyster sauce

材料Ingredients:
生菜一碗 1 bowl lettuce
蚝油半汤匙 1/2 tablespoon oyster sauce
酱油半汤匙 1/2 tablespoon soy sauce
蒜末及洋葱末 minced garlic & onion
爆香的蒜末一茶匙 1 teaspoon roasted garlic 
锅放水烧开,加盐,加入生菜翻个倒出,压干水分倒入碗里
烧热2汤匙油,加蒜末及洋葱末炒香,
加蚝油,酱油,浇在生菜上,撒上爆香的蒜末即可

clean and wash the lettuce
blanch the lettuce in a pot of salted boiling water 
for about 30 seconds 
remove and drain well
heat oil in wok, stir fry minced garlic & onion 
add in oyster sauce, soy sauce, 
stir fry for about 1-2 minutes 
pour over lettuce, sprinkle with roasted garlic and serve hot




烤东炎黑鲳鱼 Baked Tom Yam Black Pomfret

材料Ingredients:
黑鲳鱼一条 1 black pomfret fish
茄子一条切小块 1 medium diced tomato
番茄一粒切小块 1 large diced eggplant
大洋葱一粒切小块 1 medium sliced big onion
三汤匙东炎酱 3 tablespoons Tom Yam paste
香茅三条切碎 3 chopped lemongrass 
香葱少许 sliced spring onion
姜丝少许 sliced ginger
蒜末 minced garlic 
辣椒丝 sliced chili
以盐,姜末和糖腌鱼

marinate the fish with salt, ginger and sugar 
将腌制好的鱼放在铝箔上
(足以包整条鱼)
place the marinated fish on the aluminium foil 
(enough to cover the whole fish)

烧热一汤匙食油
加入蒜末,姜丝炒1分钟
加入大洋葱和东炎酱再炒1-2分钟
加入切碎的香茅,辣椒丝和一些水
再加入茄子,大火翻炒1-2分钟
然后倒在鱼上,放入番茄块和香葱
heat one tablespoon of cooking oil in pan
add in the minced garlic, sliced ginger and stir fry for 1 minutes
add in the big onion and tom yam paste and fry for another 1-2 minutes
add in the chopped lemongrass, sliced chili and some of water
add in eggplant and simmer for 1 minutes
pour the tom yam mixture onto the fish
add in the diced tomato and sliced spring onion

将它包好放入烤炉以200C烤大约10-15分钟
wrapped up the fish and bake in the preheat oven at 200C
for about 10-15 minutes or until the fish is cooked

XO醬燒茄子 Stir Fried Eggplants with XO Sauce

材料Ingredients
茄子(切小段) 2 large eggplants 
酱油1茶匙 1 teaspoon soy sauce
糖1茶匙 1 teaspoon sugar
XO酱2汤匙 2 tablespoons XO Sauce
绍兴酒1茶匙 1 teaspoon Shao Xin Wine
蚝油1/2茶匙 1/2 teaspoon oyster sauce
姜丝少许 sliced ginger
蒜末及洋葱末 minced garlic and shallot
香葱少许 spring onion
辣椒丝 sliced chili
胡椒粉及盐适量 pepper and salt to taste

热油锅,将 茄 子 炸 软 后 捞 出 
烧热1 大 匙 油 ,加入姜丝,蒜末及洋葱末炒香,
然后加 入 茄 子 以 小 火翻 炒,加入其它的调味料,
再加一杯水, 炒 到 酱汁 收 乾 即 可上桌
heat 2 tablespoon oil in wok, stir fry the eggplants until soft
remove and set aside
heat 1 tablespoon oil in wok, add in sliced ginger, 
minced onion & garlic, stir fry for q-2 minutes
add in eggplants, stir fry with low heat, add in all seasoning
add in 1 cup of water, stir fry for 2-3 minutes

迷迭香烤鸡腿 Rosemary Roasted Chicken

材料Ingredients:
鸡腿 2 chicken whole legs 
(也可以用半只鸡) (can use 1/2 chicken)
红萝卜(切小块) 1 cubed carrot
大红番茄(切小块) 1 large cubed tomatoes 
鸡肉腌制seasoning for chicken:
海盐 2 teaspoons sea salt 
新鲜的迷迭香 fresh rosemary
1/2 teaspoon of Mixed Herbs 
干百里香 1/2 teaspoon of dried thyme
黑胡椒 1/2 teaspoon of Black Pepper 
美极调味酱1 teaspoon of Maggi seasoning sauce
老抽1 teaspoon thick soy sauce
蚝油 1 teaspoon oyster sauce
纯蜂蜜 2 teaspoons pure honey
月桂叶 3 bay leaf

用海盐搓鸡腿
加入所有调味料拌匀
将鸡肉腌制1 - 2小时
rub the chicken whole legs with sea salt
add in all the seasoning and mix well 
marinate the chicken for at least 1 -2 hours

烤鸡roast chicken:
将腌制好的鸡腿摆放在烤盘里
加入红萝卜,红番茄和香葱
撒上少许香菜
再淋上橄榄油及蜂蜜
place the chicken in the roasting pan wit
add in carrot, tomato and spring onion 
sprinkle some olive oil on top and brush with some pure honey

然后放入预热烤炉250°C烤大约15分钟
将烤炉的温度调低至少200°C再烤大约10-15分钟
至到鸡块表面金黄色
(要记得翻转鸡块以确保鸡块外层烤得均匀)
roast the chicken in the pre heat oven 
at 250°C for about 15 minutes
lower the heat to 200°C and
roast the chicken for another 10-15 minutes
until golden brown on top
(check and turn the chicken if needed as
to make sure the chickens are evenly roasted)

蒸迷你班兰鸡蛋糕 Steamed Mini Pandan Egg Cake

材料Ingredients:
鸡蛋 6 eggs
白砂糖 220g caster sugar
色拉油 60ml corn oil
自发面粉 200g self raising flour
泡打粉 1 teaspoon baking powder
班兰汁 4 tablespoons Pandan juice
几滴青色素 a few drop of green colouring

先打鸡蛋和糖
把鸡蛋和糖打成乳白色
大约之前的三倍份量
把打好的鸡蛋和糖轻轻的加入自发粉
用刮刀搅拌匀(別用机打)
将面糊分两个部分,一个部分加入班兰汁及几滴青色素拌匀
将1匙班兰面糊勺入搽油的蒸杯
再加入一层原本面糊在班兰面糊上面
预先将水滚开, 蒸20分钟
Beat the eggs and sugar together
beat until the egg and sugar become white and fluffy
add in the corn oil and mix well
slowly add in the flour and mix well (do not beat with the mixer)
Divide the mixture into two portions
one portion add in the Pandan juice
add one scoop of the Pandan mixture into the greased steam cup
then add one layer of the original mixture on top of the Pandan mixture
steam in boiling water for about 20 minutes

蒸美禄鸡蛋糕 Steamed Milo Marble Egg Cake

材料Ingredients:
鸡蛋 6 eggs
白砂糖 220g caster sugar
色拉油或牛奶 60ml corn oil or milk
自发面粉 200g self raising flour
泡打粉 1 teaspoon baking powder
2汤匙美禄粉(加4汤匙热水溶解)
2 tablespoons Milo (add into 4 tablespoons hot water & mix well)

把鸡蛋和糖打成乳白色
大约之前的三倍份量
把打好的鸡蛋和糖拌入牛奶
再轻轻的加入自发粉
用刮刀拌匀
将面糊分两个部分,一个部分加入美禄拌匀
将一半的原本面糊倒入搽油的蒸盘,再加入一层美禄面糊
然后再加入另一半的原本面糊在美禄面糊上面
预先将水滚开, 将拌好的面糊蒸上35分钟
蒸好了, 等凉了就可切成块
beat the eggs and sugar together
beat until the egg and sugar become white and fluffy
add in the corn oil or milk and mix well
slowly add in the flour and mix well (do not beat with the mixer)
divide the mixture into two portions
one portion add in the Milo mixture
add one layer of the original mixture into the steam pan
then add one layer of the Milo mixture on top of the original mixture
add the balance of original mixture on top of the Milo layer
steam in boiling water for about 30-35 minutes

班兰精华 1/2 teaspoon pandan essence
几滴青色素 a few drops of green colouring

先打鸡蛋和糖
把鸡蛋和糖打成乳白色

轻轻的加入色拉油和自发粉
用刮刀搅拌匀(別用机打)
将面糊分两个部分,一个部分加入班兰精华及几滴青色素拌匀
将一半的原本面糊倒入搽油的蒸盘,再加入一层班兰面糊
然后再加入另一半的原本面糊在班兰面糊上面
预先将水滚开, 将拌好的面糊蒸上35分钟
蒸好了, 等凉了就可切成块
