巧克力小面包 Chocolate Buns


这小面包很香巧克力, 在烤箱里巧克力的香味已经散发出来, 
可以再做小粒一些, 口感会更好喔!

材料Ingredients:
高筋面粉 250g high protein flour
酵母 2 teaspoons dry yeast
奶粉 1 tablespoon milk powder
可可粉 3 tablespoons cocoa powder
冷鲜奶100ml cold fresh milk
牛油1 tablespoon butter 

高筋面粉,白油, 可可粉,奶粉及酵母一起混合
慢慢加入冷鲜奶搅拌成面团
最后加入牛油将面团搅拌至光滑及有弹性
用大盘盖着发酵1-2小时或双倍大
add all high protein flour, shortening, cocoa powder,
milk powder and dry yeast into the mixing bowl 
slowly add in cold fresh milk beat to form dough
lastly add in butter and beat to form a smooth dough
remove the dough and cover with big bowl 
and let rise for 1-2 hours or double the size

将面团分成8份,揉成圆形状,松弛20分钟
把面团弄成喜爱的形状
排在已扫牛油的烤盘上
发酵40-60分钟或双倍大
刷上蛋液
预热烤箱180度烘烤15分钟
divide the dough into 8 portions
round the dough into ball shape
and rest for another 20 minutes
roll out the dough and form shape you like
place in the greased baking pan/baking cup
let rise for 40-60 minutes or double the size 
brush with egg wash
bake at 180 for about 15 minutes



传统鸡蛋糕 Traditional Baked Egg Cake


这传统的鸡蛋糕从小就吃到大也是妈妈的最爱
小时候爸爸经营的咖啡店里也有卖, 更常带去上学吃
很传统的鸡蛋糕, 口感很好, 妈妈Kopi-O的良伴
现今也成了我Kopi-O的良伴...哈哈!

材料Ingredients:
大鸡蛋 4 large eggs
普通面粉 120g flour
白砂糖 100g caster sugar
香精 1/2 teaspoon vanilla essence

把鸡蛋和糖搅拌成乳白色
大约之前的三倍份量
慢慢的加入普通面粉拌匀
然后加入香精拌匀
然后用勺子舀入杯子
在预热烤箱180度烘烤大约15-18分钟 
cream the eggs and sugar together
until the egg and sugar become white and fluffy
slowly add in the flour and mix well
lastly add in vanilla essence and mix well
fill up the cup and bake at 180C for about 15-18 minutes
and until golden brown on top

香脆南乳炸排骨 Crispy Fried Nam Yee Pork Ribs

材料ingredients: 
排骨(切小块) 500g pork ribs (cut into small pieces)
南乳 2 pieces nam yee
南乳汁 1 tablespoon nam yee sauce
腐乳1小块+1茶匙腐乳汁 
1 small piece fu yee + 1 teaspoon fu yee sauce
蒜末 some minced garlic
绍兴酒 2 teaspoons shao xin wine
蚝油 1 teaspoon oyster sauce
糖 half teaspoon sugar

排骨: 以南乳,南乳汁,腐乳,腐乳汁,蒜末,绍兴酒,蚝油拌匀
用手揉及拌匀, 放入冰箱腌制24小时
pork ribs: rub in all seasoning into the pork ribs
keep in the refrigerator and marinate it for at least 24 hours

炸前将腌制的排骨解冻, 再用手稍微揉几下
热油锅, 以大火然后转中火炸排骨至香脆即可
before fry rub a bit on the pork ribs 
fry the pork ribs with high heat and medium heat until crispy and tender

金瓜玫瑰馒头 Pumpkin Rose Man Tou


多美丽的玫瑰花,多可爱的玫瑰花,
我就这样深深的爱上她!
哇!这些玫瑰花好软噢又香
搅拌的时候面团的金瓜味好香
搅拌好的面团特别柔软

材料Ingredients:
包面粉 250g bau flour
金瓜泥 120g mashed pumpkin
干酵母 1 teaspoon instant yeast
发粉 1/2 teaspoon baking powder
温水 80ml warm water

金瓜煮熟压成泥
把金瓜泥和所有材料放入搅拌盘混合均匀
慢慢地加入温水搅拌至柔软和光滑的面团
待发至少45-1小时
steam the pumpkin and smash with fork 
& form mashed pumpkin
mix the mashed pumpkin & all ingredients together 
add in warm water slowly and knead/beat well 
to form a soft and smooth dough
rest for at least 45 minutes - 1 hour 

将面团分成小粒状再揉圆形
杆成小小的圆形面团
6片面团重贴(如图)
用筷子在中间轻轻一压
揉一小条状当中心
慢慢卷起在中间切一半
就成了两朵漂亮的玫瑰花
待发15-20分钟,用大火蒸7分钟即可
divide the dough into small portion 
roll out flat into round shape
place 6 pieces together (as show in picture)
use one chopstick lightly press in the middle
make one long round roll as center of rose
slowly roll up the dough and cut into half
it will form two beautiful roses
leave to rise for another 15-20 minutes
steam over high heat for 7 minutes

香蕉杯子蛋糕 Banana Cupcakes


材料Ingredients:
黄油 150g butter
砂糖 120g sugar
自发面粉 250g self raising flour
鸡蛋 3 eggs
熟的大香蕉(去皮压成泥) 3 ripe bananas (mashed)
香蕉香精 1/2 teaspoon banana essence
苏打粉 1/4 teaspoon soda bicarbonate

将黄油和糖用打蛋器拌打至蓬松
慢慢加入鸡蛋
再用拌打至蓬松
加入一半的面粉,苏打粉,慢慢翻动搅拌均匀,
然后加入香蕉泥,香蕉香精搅拌均匀
然后再加入另一半的面粉拌匀
然后用勺子舀入杯子
在预热烤箱180度烘烤大约20-25分钟 
cream butter & sugar till light and fluffy
add eggs one at a time
fold in sifted half the flour with soda bicarbonate and mix well 
mix in mashed bananas and banana essence
lastly add in the balance of the flour and mix well
fill up the cup about 80% full 
and bake at 180C for about 20-25 minutes
or and a toothpick inserted into a cupcake comes out clean



香辣茄子五花腩 Spicy Eggplants Pork Belly


材料Ingredients:
五花腩(切小块) 300g pork belly (diced)
茄子1条(切长条) 1 eggplants (cut into smaller pieces)
豆瓣酱 2 tablespoons taucu paste 
蒜末, 姜片, 葱段, 小辣椒, 辣椒干
调味料: 生抽,黑酱油,绍兴酒,糖
minced garlic, sliced ginger, sliced spring onion, chili, dried chili
soy sauce, black thick soy sauce, shao xin wine, sugar

五花腩用绍兴酒, 黑酱油, 蚝油及生粉稍微腌制
marinate the pork belly with shao xin wine, black thick soy sauce, 
oyster sauce and corn starch

将茄子稍微煎炸过, 取出沥干油份
pan fry the eggplants and set aside

热油锅加入姜片爆香再加入蒜末翻炒香
然后加入豆瓣酱翻炒几下
加入五花腩, 葱段, 小辣椒, 辣椒干及适量的水焖煮大约15分钟
再加入炸好的茄子和调味料, 煮至水快收干即可
heat oil in wok, add in sliced ginger and fry for 1 minute
add in minced garlic and stir fry for another minute
then add in taucu paste and stir fry
add in pork belly, sliced spring onion, chili, dried chili 
and water simmer for about 15 minutes
lastly add in eggplants simmer until the sauce thicken
