蜜汁烧鸡翅 Honey BBQ Chicken Wings


材料Ingredient:
鸡翅
chicken wings

腌汁材料Seasoning:
生抽, 老抽, 蚝油, 绍兴酒, 糖, 盐, 胡椒粉, 蜂蜜
soy sauce, thick soy sauce, oyster sauce, 
Shaoxin wine, sugar, salt, pepper & honey

将鸡腿洗净再沥干水分 
然后用小刀在鸡翅上割划几下(使腌汁容易入味) 
放入冰箱冷藏室腌制至少4-6小时,最好隔夜
clean and dry the chicken wings
make a small cut on chicken wings
marinate the chicken wings for at least 4-6 hours
better even marinate it overnight

预热的烤箱以190度
将鸡翅串起来
涂上蜂蜜, 放入烤箱烧烤两面大约25分钟或至熟
pre heat oven at 190C
brush some honey on the chicken wings
grill it around 25-30 minutes and until the chicken wings are cooked

切达奶酪香葱面包卷 Cheddar Cheese Onion Bread Roll

材料Ingredients:
酵母 2 teaspoons dry yeast
温水 50ml warm water
幼糖 2 teaspoons sugar
高筋面粉 2 teaspoons high protein flour

将以上材料溶解在一个小碗大约10-15分钟备用
mix all ingredient above in a bowl and let set for about 10-15 minutes

高筋面粉 300g high protein flour
幼糖 2 tablespoons sugar
奶粉 1 tablespoon milk powder
冷鲜奶 150ml cold fresh milk
牛油 1 tablespoon soft butter

高筋面粉,白油,糖,奶粉一起混合均匀
加入溶解的酵母搅拌面团
慢慢加入冷鲜奶搅拌面团, 然后加入牛油
将面团搅拌至光滑及有弹性
用大盘盖着发酵1小时或双倍大
将面团分成8小份,揉成圆形状,松弛20分钟
把面团压扁成圆形,卷入切达奶酪片
排在已扫牛油的烤盘上或纸杯里
发酵40-60分钟或双倍大
涂一层蛋液加上香葱及大洋葱圈
洒上切达奶酪薄片
预热烤箱180度烘烤15分钟
add all high protein flour, shortening, sugar, milk powder, 
into the mixing bowl and mix well
add in the yeast mixture and beat to form a dough
slowly add in cold fresh milk beat to form dough
lastly add in butter and beat to form a smooth dough
remove the dough and cover with big bowl 
and let rise for 1 hour or double the size
divide the dough into 8 mini portions 
round the dough into ball shape
and rest for another 20 minutes
roll out the dough, roll up with slide cheddar cheese
place in the greased baking pan/baking cup 
let rise for 40-60 minutes or double the size 
brush with egg wash 
place some onion rings and spring onion on top
sprinkle with some cheddar cheese on top
bake at 180 for about 15 minutes

芋香椰奶燕菜 Yam Coconut Milk Agar Agar


材料Ingredients :
燕菜粉 2 tablespoons agar agar powder
芋头切块(蒸熟搅泥状) 250g
250g yam cubed (steamed and mashed)
水 800ml water
糖 180g sugar 
浓椰浆 400g coconut milk 
班兰叶 pandan leaf

将水和香兰叶一起煮滚
将香兰叶取出
用适量的水加入燕菜粉溶解后加入煮滚
然后加入糖芋头泥和浓椰浆再煮滚
熄火将燕菜分成两份,一份加入少许紫色素拌匀
先倒入一层椰奶燕菜
稍微冷却后加入一层紫色燕菜
重复步骤一层椰奶燕菜再一层紫色燕菜
冷却后放入冰箱
然后取出切成喜爱的形状

dissolved the agar-agar powder with 80ml water
then add into the pandan water and bring it to boil
add on sugar, mashed yam and thick coconut and bring to boil
remove from heat and divide it into two portions
one portion add in a few drop of purple colouring
make one layer of coconut milk agar agar 
let cool off and add another layer of purple agar agar
repeat the step until done
let cool off and chill in the refrigerator 
remove from the refrigerator and cut into the shape you like




芋头糯米饭 Steamed Glutinous Yam Rice

材料Ingredients:
糯米三杯
芋头250g(切粒状)
腊肠1根(切片)
润肠1根(切片)
香菇4朵(切粒)
虾米半碗
洋葱4(切碎爆香至微焦备用)
麻油1大匙
蒜末及洋
香葱(切粒)
盐和胡椒粉
3 cups glutinous rice
1 Chinese sausage (diced)
4 pieces mushroom (soak in cold water & diced)
1/2 bowl dried shrimps (soak in cold water)
4 small onions (chopped, fried & set aside)
1 tablespoon sesame oil 
minced garlic & onion
diced spring onion
salt and pepper
糯米先用冷水浸泡4小时
香菇及虾米先用冷水泡软
先将芋头粒及虾米炒香捞起备用
热油及麻油,放入洋葱碎小火炒至微焦 
加入蒜末再炒香
加入香菇腊肠炒香
然后加入糯米翻炒
慢慢的加入水
(分次加,不要让米太软) 
炒至七分熟,加入所有调味料
盛入蒸盘大火蒸15分钟或至熟透即可
将爆香至微焦的小洋葱拌入蒸好的糯米饭撒上香葱
soak the glutinous rice for at least 4 hours
stir fried the yam and dried shrimp and set aside
heat cooking oil and sesame oil in wok
stir fry the chopped onions until slightly burn
add in minced garlic fry for another 1 minute
add in mushroom and sausage stir fry for another 1 minute
then add in glutinous rice and stir fry 
slowly add in water
(do not add too much water)
fry the glutinous rice until 70% cooked
add in salt & pepper to taste
place it into the steam pan
steam in high heat for about 15 minutes or until the rice is cooked
mix in the fried onion and sprinkle with some spring onion on top
