香蕉蛋糕 Banana Cake

家里又有两条熟透的香蕉
是时候拿来弄蛋糕啦
烤的时候蛋糕香到不得了
又香到整栋大楼了呀😍😄

很简单的食谱
A) 125g蛋糕粉+2茶匙发粉+1/2茶匙苏打粉拌
A)  125g cake flour+2 teaspoons baking powder+1/2 teaspoon soda bicarbonate
B) 200g香蕉泥+1/2茶匙苏打粉+50ml牛奶拌匀
B)  200g smashed banana+1/2 teaspoon soda bicarbonate+50ml milk 
中蛋 medium eggs 
125g 奶油 butter
60g 细砂糖 castor sugar

将奶油和糖打发
逐粒加入蛋再打发
加入B拌匀
再加入A拌匀
(可以加入葡萄干或核桃)
装入烤盘或纸杯
放入预热烤箱180烤大约25-30分钟
cream the butter and sugar until fluffy
add in egg one at a time continue to cream until fluffy
add in item B and mix well
then add in item A and mix well
(can add in raisin or walnut if prefer)
scoop into the baking pan or cupcake cup
bake in pre heat oven at 180C for around 25-30 minutes

虽然费时费力
但是却超有满足感
看了开心吃了更满足
都用了天然色素

杂果蛋糕 Fruits Cake

好棒的蛋糕哦
拌好就已经香满屋了
再入烤炉还得了
简直是飘香到整栋大楼
吃在口里甜在❤里

材料Ingredients
面粉 120 cake flour
黄油 100g butter
黄糖 50g brown sugar
鸡蛋 2 medium eggs
盐 1/4 teaspoon salt
柠檬汁(取自1粒柠檬) lemon juice (from 1 lemon)
250g 杂果 (加入3汤匙brandy)
250g mixed fruits (add in 3 tablespoons brandy)

先将杂果,黄糖和黄油以小火煮至
黄油和黄糖溶解拌匀,待冷
然后逐粒加入鸡蛋拌匀
 之后再分次加入过筛的粉及盐拌匀
最后加入柠檬汁拌均
倒入抹了油粉的烤盘弄平
放入烤箱以190度烤大约40分钟
In a large bowl add in mixed fruits, butter and brown sugar 
Cook over small heat until the butter and sugar melt and mix well
Cool off
add in egg one at a time & mix well
add in sifted flour and salt slowly and mix well
lastly add in the lemon juice and mix well
pour into the baking pan and flatten it
bake in the pre-heated oven at 190C 
bakefor about 40 minutes or until done
待冷用锡箔纸包紧
再用保鲜纸包好
Cool off
Wrap it tight with aluminium foil
Then wrap another layer with cling wrap
放入冰箱隔天就可以切了
Keep in the refrigerator overnight

包菜土豆饼 Cabbbage Potato Cake


好好吃的包菜土豆饼
简单又好吃

土豆 2 粒 potato 2 medium size 
 包菜 1 小碗 cabbage 1 small bowl
少许香菜 a bit of corainder
少许香葱 a bit of spring onion
一些鸡精粉, 盐和胡椒粉
A bit of chicken powder, salt and pepper

土豆煮熟去皮
压成土豆泥
加入其他材料拌匀
揉成圆泥团然后压扁
沾些芝麻
用奶油热平底锅
煎至两面金黄色即可
Potato cooked and smashed
Add in all other ingredients 
Mixed well
Round up and flatten 
Dip into sesame seed
Melt butter in hot pan 
Frie untill both side golden brown

蒸绿茶奶油蛋糕 Steamed Green Tea Butter Cake

 

材料Ingredients:
鸡蛋 2 eggs
面粉 160g flour
幼糖 80g caster sugar
牛油 150g butter
绿茶 2 teaspoons green tea powder

把牛油和糖打发
将鸡蛋一粒一粒的加入继续打发
然后加入面粉拌匀
将面糊分成两个部分
一个部分加入绿茶拌匀
将面糊分别一层又一层的入抹了油的蒸盘
放进已烧开水的蒸锅
用中火蒸大约30-35分钟 
(竹签插入蛋糕体,拿出不沾黏,即熟透)
cream butter and sugar in mixer bowl until fluffy
add in egg one at a time and cream until fluffy
fold in the flour slowly and mix well
divide the dough into two portions
one portion add in green tea powder and mix well
scoop the two different portion layer by layer 
into the greased steam pan 
steam in the boiling hot water for about 30-35 minutes
to check the readiness by using toothpick
if the tooth pick come out clean, then it ready

Cendol燕菜月饼 Cendol Agar Agar Mooncake


蛋黄 Egg Yolk
材料Ingredients :
燕菜粉 1 1/2 teaspoons agar agar powder 
水 300ml water 
糖 40g sugar
班兰叶 pandan leaf
橙色素 \orange coloring 
(也可以弄天然的色素
用鲜橙汁或萝卜汁)
(can use fresh orange juice or even carrot juice
for the egg yolk coloring)

将水和香兰叶一起煮滚
将香兰叶取出
加入燕菜粉和糖煮滚
熄火调好蛋黄色
将燕菜倒入蛋黄模
冷却后放入冰箱
boil pandan leaf in the water
removed pandan leaf after boiled
add in agar-agar powder and sugar bring to boil
remove from heat make egg yolk colour 
and pour into the egg yolk mould
let cool off and chill in the refrigerator 

内层 Inner Layer
材料Ingredients :
燕菜粉 3 teaspoons agar agar powder
椰糖(热水溶化隔过) 2 tablespoons Gula Melaka (melted in hot water)
水 400ml water 
糖 60g sugar
浓椰浆 60ml thick coconut
班兰叶 pandan leaf

将水和香兰叶一起煮滚
将香兰叶取出
加入燕菜粉,椰糖和糖煮滚
加入椰浆再煮滚
熄火将燕菜倒入较小的模
加入一粒蛋黄在中间
冷却后放入冰箱
boil pandan leaf in the water
removed pandan leaf after boiled
add in agar-agar powder, gula melaka and sugar bring to boil
add in thick coconut and bring to boil
remove from heat and scoop into smaller mould 
and add in 1 egg yolk in the center
let cool off and chill in the refrigerator 

Cendol 外层 Cendol Outer layer
材料Ingredients :
菜燕粉 1 packet agar agar powder (12g) 
水 700ml water 
浓椰浆 200ml thick coconut
Cendol 
糖 180g sugar
班兰叶 pandan leaf

将水和香兰叶一起煮滚
将香兰叶取出
加入燕菜粉和糖煮滚
加入椰浆再煮滚
熄火调色将2汤匙燕菜加入燕菜月饼模
加入2茶匙cendol拌匀
再加入一块单黄燕菜在中间
然后再加满燕菜
冷却后放入冰箱

add in agar-agar powder and sugar bring to boil
add in thick coconut and bring to boil
scoop two tablespoons into the agar agar mooncake mould
add in 2 teaspoons cendol and mix well
add in egg yolk agar agar in the center
scoop into the agar agar and covered full 
let cool off and chill in the refrigerator
