葱烧红枣鱼 Spring Onion Red Snapper

看了MAY姐有请的节目,
宁波人吃鱼的煮法,
也让我copy了这个煮发来弄一道鱼的食谱。
我稍微改过煮法,煮出来的味道真棒,
老爷子赞不绝口。。。开心喔!
我还加了几块新鲜的鱼饼,味道更加鲜甜!

材料Ingredients:
红枣鱼 red snapper
蒜粒 (稍微排扁) garlic (lightly smashed)
葱段 spring onion 
芫荽 coriander

调味料seasoning: 
豉油皇 4 tablespoons soy sauce
老抽 1 tablespoon black soy sauce
绍兴酒 1 tablespoon shao xin wine
糖 1 teaspoon sugar
少许 salt to taste
1碗 water 1 large bowl

鱼入锅煎至两边金黄后盛出
锅加入蒜粒然后将葱段放在蒜粒上
将煎好的鱼放在葱段上
加入调味料及水盖上
小火焖烧15分钟
稍微收干汁即可
deep fry the fish both side until golden brown
in the wok, place the garlic and spring onion on top the garlic
then place the fried fish on top of the spring onion
add in all seasoning and water
covered and braise with low heat for about 15 minutes
thicken the sauce and serve hot





香蕉绿茶蛋糕 Banana Green Tea Cake


再研究一款新蛋糕,
好香的咖啡香蕉味,也带着绿茶香,
两者配合完美极了,松软又香味十足,
很好吃很满意!

材料Ingredients:
奶油 200g butter
鸡蛋 3 eggs
砂糖 180g caster sugar 
熟的大香蕉 2 ripe mashed bananas 
/淡奶 2 tablespoons evaporated/fresh milk
面粉 200g flour
发粉 1/2 teaspoon baking powder
苏打粉 1/4 teaspoon baking soda
绿茶粉 2 teaspoons green tea powder

先将油和幼糖以快速度搅拌至松白
然后先将鸡蛋稍微打发
分次的用汤匙以每次二汤匙的蛋液加入已经打好的奶油和糖内
再以快速度搅拌至松白
加入鲜奶搅拌均匀
 之后再分次加入过筛的粉以慢速度搅拌均匀
把蛋糕面糊分成两部分
一部分加入绿茶粉拌均
另一部分加入香蕉 
两部分蛋糕面糊分层的倒入烤模
其间洒上一层薄薄的可可粉
放入烤箱以170度 烤大约40分钟
竹签插入蛋糕体,拿出不沾黏,即熟透
cream the butter and sugar until fluffy and light
beat the egg lightly 
add in 2 tablespoons at a time of beaten egg 
into the mixture & cream in high speed until fluffy
add in milk and cream well
add in sifted flour slowly and mix well
divide the mixture into two portions
one portion add in green tea powder
another portion add in the mashed banana
pour in the banana mixture onto the baking pan
sprinkle one layer of cocoa powder on top
then add in the green tea cake mixture on top 
sprinkle another layer of cocoa powder 
and lastly add in the balance of banana cake mixture
bake at 170C for around 40 minutes

简易版萝卜糕 Simple Chinese Radish Cake


下雨天又是星期天在家闲着
妈妈从金马仑买的白萝卜
已经在冰箱里呆了一个星期了
好吧,今天就把它干掉。。。嘻嘻嘻!
就弄个简单的萝卜糕啦!
这只是加了香肠和虾米而已,
所以我称它为简易版。
我通常会加冬菇,香肠,虾米,
干瑶柱,就称为“珍贵版”。。。哈哈!

材料Ingredients:
白萝卜400克
400g Chinese Radish (grated & removed excess water)
粘米粉 300g rice flour
水 500ml water
腊肠(切粒) 2 Chinese sausages (diced)
虾米(洗净滤干) 3 tablespoons dried shrimps (soaked & drained)
蒜末和洋葱末 minced garlic & shallot

调味料:盐、五香粉、鸡精粉胡椒粉、少许生抽
seasoning: salt, five spice powder, chicken stock powder, pepper, soy sauce

烧热油锅,放入蒜末和洋葱末炒香 
然后加入虾米腊肠盛起
不加油将白萝卜丝倒入翻炒干
再加入炒好的虾米腊肠翻炒
加入所有的调味料翻炒均匀
将粘米粉参入500ml水调拌均匀
将搅匀好的粘米粉糊过筛慢慢倒入锅中翻拌均匀
倒入涂了油
将蒸锅放入水烧开
锅中盖上大火蒸35-40分钟
待冷至少半小时才可切小块
烧热油锅,煎炸至金黄微焦,软滑甘香
heat oil in wok, fry the mince garlic & shallot
add in Chinese sausage & dried shrimp fry for another 1-2 minutes
use the same wok, do not add oil
add in the grated Chinese radish stir fry until dry
add in the fried Chinese sausage and dried shrimp
stir fry it until the radish is soft
add in all seasoning and mix well
mix the rice flour with water to make a thin batter
gradually stir in the rice flour and water mixture 
transfer the cooked radish mixture into the greased steamed pan
steamed in boiling hot water for about 35-40 minutes 
the radish cake will look a little wobbly 
when remove from the steamer
it will firm up after cool off
allow to cool off at least 1/2 hour before 
cut it into small pieces
pan fry it until golden brown or slightly burn

香肠冬菇老鼠粉 Fried Sausage Mushroom Loh See Fun


材料Ingredients:
老鼠粉二人份) loh see fun(for two persons)
香肠 1 sliced Chinese sausage 
白菜(切丝) 1 bowl sliced white cabbage 
冬菇(泡软切薄片) 3 pieces dried mushroom (soaked and sliced)
鸡汤 1 bowl chicken stock
蒜末 minced garlic
洋葱 1 large sliced onion
香葱切段 sliced spring onion
调味料:老抽,,绍兴酒胡椒粉盐适
seasoning: black soy sauce, soy sauce, sesame oil, 
shao xin wine, pepper, salt to taste

香肠稍微爆香沥油备用
以热油爆香蒜末和洋葱
加入白菜丝冬菇翻炒
然后加入鸡汤鼠粉大火翻炒
加入香肠味料再翻炒拌匀
最后加入香葱拌匀即可
pan fry the sausage and keep aside
heat oil in wok
stir fry the minced garlic and sliced onion 
add in white cabbage and mushroom continue stir fry
add in chicken stock and loh see fun stir fry with high heat
then add in sausage and seasoning to taste 
continue stir fry for another 1 -2 minutes
lastly add in spring onion and mix well will do

蜜糖柠檬汁 Homemade Honey Lemon Juice


自制蜜糖柠檬汁,简单又健康的饮料。。。哈哈!
功效 : 美白,防治肾结石,提高免疫力,
祛痰 ,消脂肪,助消化。

注意: 胃酸过多者,溃疡患者不宜饮用

材料Ingredients:
柠檬 2 large lemon
蜂蜜 honey
水 water

可以密封的瓶子 one air tight container
(先要把瓶子用开水煮过杀菌 

container must rinse with hot water before use)
用盐搽柠檬外皮然后清洗干净
新鲜的柠檬切片
先叠入一半的柠檬片在瓶子里
倒入一半的蜂蜜
再叠入另一半的柠檬片
再倒入剩下的蜂蜜
最后加入水(要用冷水)摇晃拌匀
放进冰箱冷藏
三天后就可以饮用了
如果认为太甜可以加水才喝
use some sea salt to rub the lemon skin
then rinse and slice the lemon into thin slices
place half the sliced lemon into the container
pour in half the honey
then place the balance of sliced lemon into the container
pour in the remaining honey into it
add in water and shake well
keep in the refrigerator for 3 days
if find it too sweet can add in some water before drink it

地图蛋糕 Topo Map Love Cake (1)

今天来个多层的地图蛋糕
上回只弄出了两层
烤好了出来的效果非常满意
看到都回从心底里笑出来。。。嘻嘻!
而且蛋糕体质很松软
味道很棒很好吃!

材料Ingredients:
面粉 200g cake flour
发粉 1 teaspoon baking powder
黄油 250g butter
幼糖 180g sugar
鸡蛋 4 eggs
淡奶 3 tablespoons fresh milk
香草精华 1 teaspoon vanilla essence
颜色素 colouring 
可可粉 cocoa powder

先将黄油和幼糖以快速度搅拌至松白
然后先将鸡蛋稍微打发
分次的用汤匙以每次二汤匙的蛋液加入已经打好的奶油和糖内
再以快速度搅拌至松白
加入淡奶, 香草精华搅拌均匀
 之后再分次加入过筛的粉以慢速度搅拌均匀
把蛋糕面糊分成几个部分
加入不同的颜色素拌匀
然后分层的加入烤盘里
其间洒上一层薄薄的可可粉
放入烤箱以170度 烤大约40分钟
竹签插入蛋糕体,拿出不沾黏,即熟透

into the mixture & cream in high speed until fluffy
add in milk and vanilla essence and cream well
add in sifted flour slowly and mix well
divide the mixture into few portions
each portion add in different colouring and mix well
scoop the diffident mixture onto the baking pan
in between the layer sprinkle one layer of cocoa powder in between
bake at 170C for around 40 minutes

白馬王子

又是時候我的「白馬王子」要去作檢查了
應該是最後第二次的免費檢查
最後一次是在十月十六號之前
好快的轉眼間兩年就過去了
「白馬王子」也陪了我兩年
可愛的王子好聽話
這兩年並沒有讓我失望過
除了換給它四條新輪胎
還是值得的
自從換了新輪胎之後
一切都順順利利的
陪我東奔西跑,南上北下
都順暢無礙,值得高興耶! 

買新車子就是這樣
只要沒有大問題
不帶給你煩惱
就算很幸運了 
做人也是一樣,不要求完美
只要過得簡單,快樂就好
簡單就是幸福啊!

Petai猪肉碎 Petai Minced Pork

超棒的好味道!
好下饭而且还可以夹面包吃,都很棒哦!
好久没有煮petai了
上个星期和老公在杂饭店吃着petai
老公就叫我煮给他吃
今天就煮一大碗的猪肉碎petai
可以留一些明天用来夹面包吃
老公好爱吃,配着炒饭
吃着。。。吃着。。。就只吃剩一点点
还好还够我用来夹面包呀!嘻嘻!

材料Ingredients:
猪肉碎 300g minced pork 
臭豆 petai 
大洋葱(切小块) 2 large sliced onion
蒜末 minced garlic
辣椒 chili
桔子水 tangerine juice
马来栈粉 2 teaspoons belacan powder
鸡咖喱粉 2 tablespoons chicken curry powder
盐适量 salt to taste

热油锅放入蒜末和大洋葱炒香
加入鸡咖喱粉辣椒翻炒香
然后加入猪肉碎臭豆大火翻炒
再加入马来栈粉适量的桔子水炒干
加入适量的盐调味拌匀即可
hit oil in wok, stir fry in minced garlic and onion
add in curry powder and chili and stir fry for 1-2 minutes
add in minced pork and petai and continue stir fry with high heat
then add in belacan powder and tangerine juice stir fry and mix well
add in tangerine juice and asam juice fry and mix well
lastly add in salt to taste

香辣花生莲藕焖鸡爪 Spicy Peanut Lotus Root Chicken Claw

鸡爪软烂,入口即化,
花生莲藕都很入味,
好下饭的一道菜!
我喜欢花生所以加了一大碗
如果喜欢吃辣可以多加一些辣椒干

材料Ingredients:
鸡爪 8 pieces chicken claws
花生米粒 1 bowl peanut
莲藕切 1 large sliced lotus root
豆瓣酱 1 tablespoon taucu paste
姜片 sliced ginger
蒜末及洋葱末 minced garlic & shallot
辣椒干,冰糖八角及丁香花适量
some dried chili, rock sugar, star anise & lilac
芫荽 coriander

调味料:老抽,生抽,绍兴酒,蚝油
seasoning: dark soy sauce, light soy sauce, shao xin wine, oyster sauce

将鸡爪洗净,开水锅中焯水 
然后放冷水中洗去浮沫备用 
砂锅放油,加入姜片蒜末及洋葱末爆香 
加入豆瓣酱辣椒干翻炒至香 
放入鸡爪翻炒一会 
然后放入清水冰糖八角及丁香花和调味料 
加入花生米莲藕
先用大火烧开 
再改用小火焖煮30至45分钟或至鸡爪酥烂
稍微收干汁最后加入芫荽稍微拌匀即可
boiled the chicken claws and put in cold water
to wash away the oil then drain and set aside
heat oil in clay pot, add in sliced ginger, mince garlic & shallot
stir fry for about 1 minute
add in taucu paste and chili stir fry for another 1 minute
add in the chicken claw and stir fry and mix well 
add in water, rock sugar, star anise and lilac and seasoning 
then add in peanut and lotus root 
bring to boil in high heat 
then simmer in low heat for about 30-45 minutes
or until the chicken claw is tender 
lastly add in coriander and mix well
