意大利海绵杯子蛋糕 Genoise Sponge Cupcake

今天 终于开始了第一课
意大利海绵杯子蛋糕
原来这蛋糕的口感很好
食谱来自The AWW Cooking School Cook Book

要谢谢舅母送的圣诞礼物
也是我今年最棒的一份礼物

材料Ingredients:
面粉100g cake flour
黄油(溶化置冷) 60g butter (melted and cooled)
砂糖100g castor sugar
中形鸡蛋 4 medium eggs
香草香精 1 teaspoon vanilla essence
将鸡蛋和糖隔温水高速打发到泛白且蓬松(大约十分钟)
碗底部不要接触到温水
离温水再搅拌大约两分钟
慢慢加入面粉拌匀
然后加入溶化黄油快速拌匀
最后加入香草香精拌匀
填满每个杯子蛋糕的杯子
在预热烤箱170度烘烤大约15-18分钟
直到顶部金黄色
preheat oven to 170 degrees C
cream butter and sugar over simmer water until light (around 10 minutes)
the simmer water do not touch the base of bowl
remove from simmer water and continue to beat for 2 minutes
fold in flour and mix well
then add in melted butter quickly mix well
lastly add in vanilla essence
fill the muffin cups with batter
bake for about 15-18 minutes or until lightly browned on top

冷却后将蛋糕切成一半
涂上草莓酱再加上一两片草莓
连合上再洒上一些糖霜
再以草莓做装饰
cool off and cut the cupcake into half
spread some strawberry jam on one side
place it back together and sprinkle some icing sugar on top
decorate with some strawberry
