金瓜土豆咖哩包仔 Pumpkin Potato Curry Bao

好久没有弄金瓜包
昨天在迷你市场看到漂亮的金瓜
买了一大块回来
家里还有好多粒土豆及两粒大洋葱
今天可以弄金瓜包
一早先炒好土豆咖哩
再煮熟金瓜搅烂待冷备用

只觉得金瓜的颜色不够“金”耶!
不过蒸出来的包仔还蛮“亮金金”的。。。开心哦!

材料Ingredients:
包面粉 300g bau flour
金瓜泥 150g mashed pumpkin
干酵母 1 teaspoon instant yeast
发粉 1/2 teaspoon baking powder
温水 80ml warm water

金瓜煮熟压成泥
把金瓜泥和所有材料放入搅拌盘混合均匀
慢慢地加入温水搅拌至柔软和光滑的面团
待发1小时
将面团分成小粒状再揉圆形
杆成小小的圆形面团
待发至少20分钟 弄平
包入土豆咖哩馅
用布盖上待发45分钟 
用大火蒸20分钟即可 
steam the pumpkin and smash with fork 
& form mashed pumpkin
mix the mashed pumpkin & all ingredients together 
add in warm water slowly and knead/beat well 
to form a soft and smooth dough
rest for at least 1 hour 
divide the dough into 15-18 portions 
round it and leave it to rest for another 20 minutes 
flatten the dough and place the filling 
place each wrapped dough on a small piece of parchment paper 
cover the bao with a piece of cloth and 
allow it to rise for 45 minutes 
steam in boiling water for 20 minutes


土豆咖哩包仔馅料 Potato Curry Ingredients:
土豆(煮熟切小块) 3 potatoes (cooked and diced)
大洋葱(切小块) 2 large sliced onion
蒜末 minced garlic
咖喱叶 curry leaves
咖喱粉 3 tablespoons chicken curry powder

下3汤匙食油烧热镬
加入蒜末和洋葱片翻炒
加入咖喱粉
和咖喱叶翻炒至香
然后加入土豆再翻炒加入胡萝卜翻炒
最后加入煮熟切块的土豆
再放入适量的生抽,盐和胡椒粉
翻炒2-3分钟至牛肉熟即可
Heat 3 tablespoons cooking oil in wok
stir fry the minced garlic and sliced onion
add in curry powder and curry leaves stir fry for 1 minute
add in beef and stir fry for another 2-3 minutes
add in carrot and curry leaves and stir fry
lastly add in the cooked and diced potatoes
add in soy sauce, salt and pepper to taste
stir fry for 2-3 minutes and mix well

香炒韭菜老鼠粉冬粉 Fried Loh See Fun N Dong Fen W chives

材料Ingredients:
老鼠粉 1 packet loh see sun 
粉丝 (泡软洗净沥干水备用) glass noodles(clean soaked & drained) 
虾米(泡软洗净沥干水备用) 1 tablespoon dried shrimp (clean soaked & drained)
韭菜丝 1 bowl sliced Chinese chives
蒜末和洋葱末 minced garlic & shallot

鸡高汤,生抽,黑酱油,胡椒粉,蚝油
chicken stock , soy sauce, thick soy sauce, pepper and oyster sauce

热油锅炒香蒜末和洋葱末
然后加入虾米爆香
接着加入韭菜丝炒香
加入老鼠粉粉丝翻炒
加入鸡汤和适量调味料翻炒均匀
heat oil in wok stir fry the minced garlic and shallot
add in the dried shrimp and stir fry
then add in chives and continue stir fry 
add in loh see fun and glass noodles
add in the chicken stock and seasoning to taste
stir and mix well 




香煎韭菜蛋饼 Pan Fried Chinese Chives Omelet

一家大小都爱吃的一道家常菜
简简单单的煎蛋饼
韭菜的香味拌着鸡蛋香
口感很好

材料Ingredients:
蛋 3 eggs
韭菜(切丝) Chinese chives (sliced)
绍兴酒,盐和胡椒 shoa xin wine, salt & pepper 
  
先将打散加入绍兴酒,盐和胡椒粉拌匀
烧热油锅,爆香韭菜
再加入拌匀的蛋
煎成蛋饼
将蛋饼煎至香喷喷!切块再上桌
beat the eggs, add in shao xin wine, salt and pepper 
heat some oil in pan, stir fry the Chinese chives
pour in the egg mixture
let the omelette cook for about a minute
when the base of the omelette is set
turn over and fry the other side for 
another minute until set





地图蛋糕 Topo Map Love Cake (2)

今天只准备简单的晚餐
在家闲着就弄个蛋糕吧!
好久没吃奶油蛋糕了
反正材料都齐全
就弄个简单的地图蛋糕
我是用了奶油蛋糕的食谱
一般的地图蛋糕都是三,四层的
我只做了两层
最喜欢的是中间的那一层可可味道
夹在两层蛋糕中间还带出很香的可可味道
很棒很好吃!

材料Ingredients:
面粉 200g cake flour
发粉 1 teaspoon baking powder
黄油 250g butter
幼糖 180g sugar
鸡蛋 4 eggs
淡奶 2 tablespoons evaporated/fresh milk
香草精华 1 teaspoon vanilla essence
青色素 green colouring 
(可以用班兰汁 can use pandan juice)
可可粉 cocoa powder

先将黄油和幼糖以快速度搅拌至松白
然后先将鸡蛋稍微打发
分次的用汤匙以每次二汤匙的蛋液加入已经打好的奶油和糖内
再以快速度搅拌至松白
加入淡奶, 香草精华搅拌均匀
 之后再分次加入过筛的粉以慢速度搅拌均匀
把蛋糕面糊分成两部分
一部分加入青色素拌均
将原味蛋糕面糊倒入烤模
洒上一层薄薄的可可粉
然后将青色蛋糕面糊倒在上面
放入烤箱以170度 烤大约40分钟
竹签插入蛋糕体,拿出不沾黏,即熟透
cream the butter and sugar in high speed until fluffy and light
beat the egg lightly 
add in 2 tablespoons at a time of beaten egg 
into the mixture & cream in high speed until fluffy
add in milk and vanilla essence and cream well
add in sifted flour slowly and mix well
divide the mixture into two portions
one portion add in green colouring and mix well
pour in the original mixture onto the baking pan
sprinkle one layer of cocoa powder on top
then add in the green colour cake mixture 
bake at 170C for around 40 minutes





绿茶地图杯子蛋糕 Green Tea Topo Map Cupcake


 家里甜点吃光光了,
又得准备一些放着,
下午茶饭后又有得吃!
不必让老爷子吵着没
有甜点吃,就弄几个小小的,
满足老爷子的要求。。。嘻嘻!
这小小的绿茶地图杯
子蛋糕很松软,
超香奶油味道(用了Butter Cup奶油),
再加上一小层的绿茶口味,赞!

材料Ingredients:
面粉 110g cake flour
发粉 1/2 teaspoon baking powder
奶油 110g butter
幼糖 70g sugar
鸡蛋 2 eggs
淡奶 1 tablespoon evaporated/fresh milk
香草精华 1/2 teaspoon vanilla essence
绿茶粉 1 teaspoon green tea powder
可可粉 cocoa powder

先将油和幼糖以快速度搅拌至松白
然后先将鸡蛋稍微打发
分次的用汤匙以每次二汤匙的蛋液加入已经打好的奶油和糖内
再以快速度搅拌至松白
加入淡奶, 香草精华搅拌均匀

桂圆肉杞子冰糖燕窝 Bird's Nest Dried Longan Wolfberry Rock Sugar

枸杞子冰糖燕窝 ~ 养颜,润肺止咳,
适应心悸失眠、头晕目眩。

枸杞子含甜菜碱、胡萝卜素和多种不饱和脂肪酸等,
能补血养阴,强精明目;桂圆肉含酒石酸、
腺嘌吟胆碱及多种维生素,能补血安神,滋润五脏;
冰糖含大量糖类和多种微量元素,能补中益气,养胃润肺。
注意和禁忌肺胃虚寒、腹泻患者不宜服用;
湿热者不宜多用;糖尿病患者禁用

材料(二人份)
燕窝 2 pieces bird's nest
2大碗水 2 bowl of water
枸杞子 12 pieces of wolfberry
桂圆肉 6 pieces dried longan
冰糖适量 rock sugar

燕窝用清水浸泡2小时, 清理其中的燕毛等杂物
最后,连浸泡之水一起, 加入枸杞子, 
桂圆肉和冰糖用文火隔水炖
保留燕窝的原汁原味以及营养
炖大约2小时即可
soak the bird’s nest for 2 hours until it becomes loose
cleanse and strain dry
add in the bird's nest, wolfberry, dried longan, 
water and rock sugar 
into the stewing bowl
covered and place into the slow cooker 
covered and stew for 2 hours

豉香豆腐干焖排骨 Stewed Black Bean Pork Ribs W Tofu N Potato

上菜啦!豉香豆腐干焖排骨 
软嫩排骨渗入了酱汁,有着豆豉香,也有着豆腐香
味,不单只是好味道而且好下饭

材料Ingredients:
排骨(切小块) pork ribs (cut into small chunk)
豆腐干 (切块)  tofu (cut into small pieces)
土豆 (切块) 3 potatoes (diced)
黑豆豉 2 tablespoons fermented black bean 
豆瓣酱 1 tablespoon taucu paste
蒜末和洋葱末 minced garlic and shallot
辣椒丝少许 slice chili
香菜少许 some coriander 
盐和糖适量 salt & sugar

排骨调味料 pork ribs seasoning:
老抽生抽生粉,盐和绍兴酒
thick soy sauce, soy sauce, cornstarch, salt and shao xin wine

排骨剁成块后,洗净,去水
排骨调味料腌制大约1小时
烧热油锅,放入蒜末和洋葱末炒香 
加入黑豆豉豆瓣酱辣椒丝翻炒
然后加入排骨翻炒大约1-2分钟
倒入土豆翻炒均匀,加入适量水煮滚
转小火焖煮至排骨至熟变软
加入豆腐再焖煮1分钟
最后加入适量的调味即可
撒上香菜。。。可以吃啦!
marinate the pork ribs with seasoning for at least 1 hour
fry the minced garlic and shallot with hot oil for about 1 minute
add in black bean, taucu paste and sliced chili and stir fry 
add in the pork ribs and stir fry for another 1-2 minutes
add in the diced potatoes stir fry evenly
add in water (cover all ingredients) and bring it to boil
turn to low heat simmer until the pork ribs cooked and soft
then add tofu to simmer for about 1 minute
lastly add in salt and shao xin wine to taste
sprinkle some coriander on top and serve hot

天氣才開始好起來
今天煙霾又來拜訪我們了
太陽公公也躲起來啦!

天朦朦的令人很不爽
你有沒有blur blur呢?!
好想睡覺但是又不能睡
才星期一啊!
媽媽們又再擔心孩子們的健康
更煩着洗好的衣服曬不乾   
好無奈哦!

蒸Nescafe云石蛋糕 Steamed Nescafe Marble Butter Cake


哇!香喷喷的蒸蛋糕,
满屋子香Nescafe及奶油的味道。

材料Ingredients:
鸡蛋 2 eggs
面粉 160g flour
幼糖 100g caster sugar
牛油 150g butter
Instant Nescafe 2 teaspoons + 2 teaspoons milk + 1 tablespoon hot water 

把牛油和糖打发
将鸡蛋一粒一粒的加入继续打发
然后加入面粉拌匀
将面糊分成两个部分
一个部分加入Nescafe混合液拌匀
将面糊分别一层又一层的入抹了油的蒸盘
放进已烧开水的蒸锅
用中火蒸大约30-35分钟 
(竹签插入蛋糕体,拿出不沾黏,即熟透)
cream butter and sugar in mixer bowl until fluffy
add in egg one at a time and cream until fluffy
fold in the flour slowly and mix well
divide the dough into two portions
one portion add in Nescafe mixture 
scoop the two different portion layer by layer 
into the greased steam pan 
steam in the boiling hot water for about 30-35 minutes
to check the readiness by using toothpick
if the tooth pick come out clean, then it ready

云耳麻油鸡 Braised Black Fungus Chicken

又是一道老少咸宜的家常菜哦!
爱吃稍微辣一点还可以加辣椒丝
煮法简单又好吃
有麻油香,也有姜的微辣味道,
再加上带有绍兴酒的酱汁,好下饭。
肯定令你胃口大开,多添一碗饭。

材料Ingredients:
小鸡腿 6 pieces chicken drumstick
云耳(泡软) black fungus (soaked & soften)
姜片 sliced ginger
洋葱末及蒜末 minced garlic & shallot

调味料:盐,黑酱油,胡椒粉,料酒, 麻油,蚝油
seasoning: salt, thick soy sauce, 
pepper and shao xin wine, sesame oil, oyster sauce

小鸡腿用调味料腌制大约3-4小时
麻油烧热,爆香姜片
然后加入洋葱末及蒜末爆香 
加入小鸡腿再翻炒片刻
加入适量的水和云耳
加入适量的老抽,麻油和生抽调味
小火焖煮至软 ,然后转大火稍微收干水
最后洒一些料酒,起锅装盘
marinate the chicken with all seasoning for at least 3-4 hours
heat some sesame oil in wok, stir fry the sliced ginger
then add in minced garlic and shallot and stir fry
add in chicken and stir fry for a while
add in water and black fungus
then add some black soy sauce, light soy sauce and sesame oil to taste
simmer in low heat for at least 20 minutes oruntil the chicken are cook
lastly add in some shao xin wine to taste will do



粟米萝卜鸡爪汤 Sweet Corn Carrot Soup

今天来一道家常汤 
我最喜欢喝汤,自小就养成了喝汤的习惯
吃饭前最好来一小碗汤
润喉润肺。。。嗯!赞!

材料Ingredients:
鸡爪 4 pieces chicken feet
粟米(切块) 1 large corn (cubed)
红萝卜(切块) 1 large carrot (cubed)
红枣 5 pieces of red dates
枸杞子少许 some qi zi (wolfberry)
盐适量 salt to taste

鸡爪,粟米,萝卜洗净切块
将全部材料放入褒里加清水煮沸,
改以中火煲约两个小时,以少许盐调味即可
clean and wash the chicken feet, carrot and corn 
place all ingredients into the pot
add in water and bring to boil
turn to medium heat and boil for at least 2 hours
add salt to taste

老式鸡蛋糕 Old Fashion Egg Cake

老式鸡蛋糕也与传统鸡蛋糕相识
这老式鸡蛋糕加了粟米油和牛奶
味道和口感都很好
改次再调整一下食谱加鲜橙汁或黑芝麻
看看味道如何?

一般老人家爱吃的鸡蛋糕
老少咸宜哦!

材料Ingredients:
冷鸡蛋 2 cold eggs
白砂糖 40g caster sugar
面粉 60g flour
香草精华 1/2 teaspoon vanilla essence
粟米油 6g corn oil
牛奶 10g milk
(粟米油和牛奶混合备用 corn oil & milk mix together)

冷鸡蛋用打蛋器中速打发起粗泡
然后加入砂糖继续打发
分次筛入面粉和香草精华翻拌均匀
最后加入粟米油牛奶混合液快速拌匀
倒入纸杯中
预热烤箱160度烤大约18-约0分钟或至熟透
cream the cold eggs until light
add in sugar and continue to cream until light & fluffy
fold in the sifted flour and essence and mix well
lastly add in corn oil/milk mixture and mix well
fill up the cup and bake at 160C for about 18-20 minutes
and until golden brown on top

枸杞子冰糖燕窝 Bird's Nest with Wolfberry N Rock Sugar


枸杞子冰糖燕窝 ~ 养颜,润肺止咳,
适应心悸失眠、头晕目眩。

材料(二人份)
燕窝 2 pieces bird's nest
2大碗水 2 bowl of water
枸杞子 12 pieces of wolfberry
冰糖适量 rock sugar

燕窝用清水浸泡2小时, 清理其中的燕毛等杂物
最后,连浸泡之水一起, 加入枸杞子和冰糖用文火隔水炖
保留燕窝的原汁原味以及营养
