杏仁葡萄干杯子蛋糕 Almond Raisin Cupcake

材料Ingredients:
黄油 250g butter
100克自发面粉(加入1/4茶匙盐)
100g self raising flour(+ 1/4 teaspoon salt)
杏仁粉100g ground almond 
细糖 80g castor sugar
鸡蛋 4 eggs
葡萄干适量 raisin 

将黄油和糖打至蓬松
慢慢加入鸡蛋
再拌打至蓬松
加入杏仁粉和自发面粉慢慢翻动搅拌均匀
填满每个杯子蛋糕的杯子3 / 4满
加入适量葡萄干
在预热烤箱170度烘烤大约20分钟
直到顶部金黄色
使用蛋糕测试仪来测试烤熟的杯子蛋糕
如果杯子蛋糕测试出来干净 
杯子蛋糕即可出炉
cream the sugar and butter until light and fluffy
add in egg one by one continue to beat until light and fluffy
fold in self raising flour and almond powder and mix well
fill up 3/4 full into the each cupcakes cup 
add in some raisin
preheat oven at 170
bake for about 20 minutes or until golden brown on top
use the cake tester to test the doneness of the cupcakes
if the cake tester comes out clean 
the cupcakes is done

香葱切达奶酪面包 Spring Onion Cheddar Cheese Bread

材料Ingredients:
酵母 2 teaspoons dry yeast
温水 50ml warm water
幼糖 2 teaspoons sugar
高筋面粉 2 teaspoons high protein flour

将以上材料溶解在一个小碗大约10-15分钟备用
mix all ingredient above in a bowl and let set for about 10-15 minutes

高筋面粉 300g high protein flour
白油 1 teaspoon shortening
幼糖 2 tablespoons sugar
奶粉 1 tablespoon milk powder
冷鲜奶 150ml cold fresh milk
牛油 1 teaspoon butter

高筋面粉,白油,糖,奶粉一起混合均匀
加入溶解的酵母搅拌面团
慢慢加入冷鲜奶搅拌面团, 然后加入牛油
将面团搅拌至光滑及有弹性
用大盘盖着发酵1小时或双倍大
将面团分成7大份,揉成圆形状,松弛20分钟
把面团压扁成圆形,包入香葱切达奶酪
排在已扫牛油的烤盘上或纸杯里
发酵40-60分钟或双倍大
涂一层蛋液洒上切达奶酪薄片香葱
预热烤箱180度烘烤15分钟
add all high protein flour, shortening, sugar, milk powder, 
into the mixing bowl and mix well
add in the yeast mixture and beat to form a dough
slowly add in cold fresh milk beat to form dough
lastly add in butter and beat to form a smooth dough
remove the dough and cover with big bowl 
and let rise for 1 hour or double the size
divide the dough into 7 portions
round the dough into ball shape
and rest for another 20 minutes
roll out the dough, 
wrap in cheddar cheese and spring onion 
place in the greased baking pan/baking cup 
let rise for 40-60 minutes or double the size 
brush with egg wash
add some sliced cheddar cheese and spring onion on top
bake at 180 for about 15 minutes

火腿切达奶酪香葱面包及迷你香肠面包 Ham Cheddar Cheese Onion Bread & Mini Sausage Bread

材料Ingredients:
酵母 2 teaspoons dry yeast
温水 50ml warm water
幼糖 2 teaspoons sugar
高筋面粉 2 teaspoons high protein flour

将以上材料溶解在一个小碗大约10-15分钟备用
mix all ingredient above in a bowl and let set for about 10-15 minutes

高筋面粉 300g high protein flour
白油 1 teaspoon shortening
幼糖 2 tablespoons sugar
奶粉 1 tablespoon milk powder
冷鲜奶 150ml cold fresh milk

迷你香肠面包涂一层蛋液洒上一些芝麻粒
火腿切达奶酪香葱面包涂一层蛋液
洒上切达奶酪薄片,香葱及大洋葱圈
预热烤箱180度烘烤15分钟
add all high protein flour, sugar, milk powder, 
into the mixing bowl and mix well
add in the yeast mixture and beat to form a dough
slowly add in cold fresh milk beat to form dough
lastly add in butter and beat to form a smooth dough
remove the dough and cover with big bowl 
and let rise for 1 hour or double the size
divide the dough into 8 mini portions and 5 medium portions
round the dough into ball shape
and rest for another 20 minutes
roll out the dough, roll up with mini sausage on the mini portion
wrap in the ham and cheddar cheese with spring onion 
for the medium portion of dough
place in the greased baking pan/baking cup 
let rise for 40-60 minutes or double the size 
brush with egg wash and sprinkle sesame seed
on top for mini sausage roll
for the ham bread brush with egg wash
add some sliced cheddar cheese, big onion ring 
and spring onion on top
bake at 180 for about 15 minutes

鲨丁鱼芝士面包 Sardine Cheese Buns

材料Ingredients:
高筋面粉 250g high protein flour
白油 1 teaspoon shortening
幼糖 2 tablespoons sugar
酵母 2 teaspoons dry yeast
半粒鸡蛋 1/2 egg
奶粉 1 tablespoon milk powder
冷鲜奶 100ml cold fresh milk
牛油 2 teaspoons butter

高筋面粉,白油,糖,半粒鸡蛋,奶粉及酵母一起混合
慢慢加入冷鲜奶搅拌面团, 然后加入牛油
将面团搅拌至光滑及有弹性
用大盘盖着发酵1小时或双倍大
add all high protein flour, shortening, sugar, milk powder, 
1/2 egg and dry yeast into the mixing bowl 
slowly add in cold fresh milk beat to form dough
lastly add in butter and beat to form a smooth dough
remove the dough and cover with big bowl 
and let rise for 1 hour or double the size

将面团分成9份,揉成圆形状,松弛20分钟
把面团压扁成圆形,包入沙丁鱼馅料
排在已扫牛油的烤盘上或纸杯里
发酵40-60分钟或双倍大
刷上蛋液洒上芝士薄
预热烤箱180度烘烤15分钟
divide the dough into 9 portions
round the dough into ball shape
and rest for another 20 minutes
roll out the dough, wrap in the sardine mixture
place in the greased baking pan/baking cup 
let rise for 40-60 minutes or double the size 
brush with egg wash and add some sliced cheese on top
bake at 180 for about 15 minutes

沙丁鱼馅料Sardine ingredients:
1罐沙丁鱼(弄烂) 1 can sardine (smashed)
香葱香菜少许 diced spring onion & coriander
盐及胡椒粉适量 salt and pepper to taste
小洋葱少许(切碎) some chopped shallot
辣椒(个人喜好) chili (optional)

将全部馅料混合均匀
mix all ingredients together

芋头焖排骨 Braised Pork Ribs with Yam

材料Ingredients:
芋头切片 yam (cut into big pieces)
排骨 500g pork ribs
香葱切小段 sliced spring onion
辣椒丝少许 sliced chili 
豆瓣酱2汤匙 2 tablespoons taucu paste
八角及丁香花 star anise & clove flower
洋葱末及蒜末 minced garlic & shallot

调味料:五香粉,盐,糖,生粉,黑酱油,胡椒粉,绍兴酒
排骨用调味料腌制大约3-4小时
seasoning: five spice, salt, sugar, corn starch, thick soy sauce, 
pepper and shao xin wine
marinate the pork ribs with all seasoning for at least 3-4 hours

油烧热,稍微煎炸芋头盛起备用
油烧热,放入洋葱末及蒜末炒香
然后加入豆瓣酱再翻炒香
加入腌制的排骨再翻炒几分钟
加入煎炸芋头,香葱和适量的水
盖上小火焖煮30分钟,途中要注意开盖搅拌下
以免粘锅, 如果水太少,可加点水
焖煮排骨及芋头至软
heat some oil in wok, add in yam and fry for 1-2 minutes
keep aside 
heat oil in wok, stir fry the minced garlic and shallot
add in taucu paste and sliced chili stir fry for another 1 minute
add in the marinated pork ribs stir fry for another few minutes
add in yam, spring onion and water
covered and simmer in low heat for at least 30 minutes or
until the pork ribs and yam become soft 
lastly all in salt to taste

过了中秋来了十月


今年中秋落在九月三十号星期天,
而接着第二天星期一就是十月一号了,
二零一二年就只剩下最后三个月。
时间实在过得好快,转眼间一个礼拜又一个礼拜飞逝而去,
想停下多一分钟享受美好的一刻还真难。

一踏入十月份天气热得令人“发疯”起来,
一大清早太阳公公就出来和大家打招呼。
十月不应该是雨季吗?! 怎么没有雨呢?
相信要等到农历九月初了,“九王爷诞”一定会有雨。

这样的大热天躲在家“煲”电视剧最好不过了,
同时候“追看”几部电视剧,有“南国有佳人”
“螺丝小姐要出嫁”,“花是爱”,“我们发财了”
还有期待着电影“候鸟来的季节”。
