海绵质香蕉蛋糕 Spongy Banana Cake


这海绵质香蕉蛋糕非常好吃
不油腻很松软比一般用奶油弄的香蕉蛋糕好吃得多

材料Ingredients:
粟米油 100g corn oil
鸡蛋 3 eggs
砂糖 100g caster sugar
香蕉香精 1/2 teaspoon banana essence 
熟的大香蕉 2 ripe mashed bananas 
面粉 150g flour
发粉 1/2 teaspoon baking powder
苏打粉 1/4 teaspoon baking soda

鸡蛋香蕉香精用打蛋器拌打
一直打发到提起打蛋器,滴落的蛋液不会马上消失
加入香蕉泥搅拌均匀
然后慢慢加入面粉,发粉苏打粉拌匀
最后加入粟米油轻轻拌匀
然后用勺子舀入杯子或烤盘
在预热烤箱180度烘烤大约30-40分钟 
使用蛋糕测试仪来测试烤熟的蛋糕
如果蛋糕测试出来干净
蛋糕即可出炉
cream egg, sugar & banana essence till light and stiff
add in mashed bananas and mix well
fold in sifted flour, baking powder & soda bicarbonate and mix well 
lastly add in the corn oil mix well
fill up the cup about 80% full 
and bake at 180C for about 35-40 minutes
or and a toothpick inserted into cake and comes out clean

奶油酥饼 ~ 我最喜爱的食谱 Butter Cookies - My Favorite Recipe


这是我的“最爱”
每年农历新年必定会做的奶油酥饼
家人及朋友都“爱”的农历新年饼
确是溶在口里,甜在心里!

求学时期上的家政课所学的食谱还是最棒的!
幸好没有交回给老师们
连那些年手抄的食谱还存在
虽然已经有40年的历史
现今已破旧连字体也开始模糊了
感到很欣慰还有机会用得着。。。感恩!
this is my favorite butter cookies recipe, 
make this during Chinese New Year every year.
all my family members & friends love it,
it's really melt in your mouth!

材料Ingredients:
 无盐奶油 250g butter
糖粉 60g icing sugar
面粉 200g flour
粟米粉 3 tablespoons corn flour 
奶粉 2 tablespoon full cream milk powder
少许盐 a pinch of salt

无盐奶油,加入过筛后的糖粉,盐打至松发变白
将面粉粟米粉过筛后,加入拌匀
然后加入奶粉拌匀即为酥松性面煳
在烤盘搽油,将面煳装入挤花袋中
整齐的挤在烤盘上或小纸杯里
并以160℃烤约15-20分钟即可
** 不要烤太久,失去奶油味道
cream butter, icing sugar and salt until fluffy
add in sifted flour and corn flour slowly and mix well 
lastly add in full cream milk powder mix well
put into the piping bag and pipe onto the greased baking tray
or pipe into the little cake cups
bake in preheated oven 160C for 15 to 20 minutes

**可以弄其它的味道如:香橙,可可,摩咖等等
** can make orange, cocoa or mocha flavor

巧克力芯杏仁曲奇 Chocolate Chips Almond Cookies


好贪心哦!加入了超多烤过的杏仁粒粒
入口好香,还真像在吃着famous amoschocolate cookies!

材料Ingredients:
黄油 150g soft butter
白砂糖 50g caster sugar
黄砂糖 150g brown sugar
粒鸡蛋 2 eggs
普通面粉 380g flour
1/2茶匙发粉 1/2 teaspoon baking powder
2茶匙可可粉 2 teaspoon cocoa powder
1茶匙香草精华 1 teaspoon vanilla essence
巧克力芯片 150g chocolate chips
 杏仁粒(稍微烤过)200g lightly toated almond nibs 

将黄油白砂糖和黄砂糖拌打至蓬松
加入鸡蛋和香草精华打至蓬松
加入面粉, 发粉可可粉慢慢拌匀
然后加入巧克力芯片和杏仁粒拌匀
用汤匙的量每5厘米放一勺在搽了油的烤盘上
(随个人所爱饼干的大小)
在预热烤箱180度,烘烤大约15 -20分钟
待完全冷却后才可装入饼罐
cream butter, brown sugar and caster sugar until fluffy
add in eggs and vanilla essence continue to cream until fluffy
gradually fold in flour, baking powder and cocoa powder mix well
add in the chocolate chips and toasted almond nibs and mix well
use spoon or finger to form litlle chocolate drop onto the greased baking pan
bake in preheat oven 180C for about 15-20 minutes 
cool completely before store in the cookies jar

黑芝麻馒头 Black Sesame Man Tou


 
整屋子都是黑芝麻香味
在搅拌面团时已经散发出黑芝麻香味
蒸好了更香!

之前弄过有一次蒸出来时皱皱的皮好难看。
这次美美啦!开心哦!
要注意不要发得太久
不然的话蒸好时外层会皱皱的。

材料Ingredients:
包面粉 200g bau flour
黑芝麻粉 2 tablespoons black sesame powde
幼糖 2 tablespoons sugar
干酵母 1 teaspoon dry yeast
发粉 1/2 teaspoon baking powder
温水 80ml warm water

把所有材料放入搅拌盘混合均匀
慢慢地加入温水搅拌至柔软和光滑的面团
待发至少45分钟
将面团杆成四方形卷起切小块
待发30-40分钟,用大火蒸7分钟即可
mix all ingredients together 
add in warm water slowly and knead/beat well 
to form a soft and smooth dough
rest for at least 45 minutes
roll out flat into square shape
slowly roll up the dough and cut into smaller pieces
leave to rise for another 30-40 minutes
steam over high heat for 7 minutes





奶香迷你蛋糕仔 Mini Milk Cake

谢谢君之的手工烘焙坊!
好好吃的小蛋糕好香的牛奶味道,真的是吃不腻
一大清早起来上网就被这个小蛋糕吸引着
颜色好完美,就想弄来吃。

材料Ingredients
50g 低筋面粉 low protein flour
25g 全脂奶粉 full cream milk powder
40g 黄油 butter
25g 全脂牛奶 full cream milk
2个中等大小鸡蛋 2 medium size eggs
1个蛋黄 1 egg yolk
40g 细砂糖 caster sugar

低筋面粉过筛后和全脂奶粉混合备用。
将黄油和牛奶放入小碗里,微波炉加热30秒左右,
直到黄油溶化成液态。
鸡蛋打入大碗里,加入蛋黄、细砂糖。用打蛋器高速打发。
蛋液在打发的过程中会越来越蓬松,体积膨胀数倍。
一直打发到提起打蛋器,滴落的蛋液不会马上消失,
可以在碗里画出花纹的程度,就表示打发好了。
倒入过筛的面粉及奶粉,用橡皮刮刀从底部往上迅速翻拌均匀。
将之前准备好的黄油牛奶倒入拌好的面糊里,
继续翻拌均匀。拌好的面糊呈细腻、蓬松的状态。
小蛋糕模具内壁涂上薄薄一层黄油防粘。
用勺子挖面糊倒入模具,7成满。放入预热
好上下火190℃的烤箱,中层,烤9-10分钟,
直到表面金黄色即可出炉。

椰丝酥饼 Coconut Crisps

材料Ingredients
 牛油 180g butter 
面粉 160g  flour
粘米粉 20g rice flour
糖粉 80g icing sugar
鸡蛋 1 egg
干椰丝 80g shredded coconut
装饰decoration:干椰丝适量 shredded coconut

将牛油和糖粉搅拌膨松
加入打散的鸡蛋,继续搅拌至完全混合
然后加入过筛面粉和粘米粉
再加入椰丝搅拌均匀
把面团装入挤花袋中,挤入迷你纸杯,再撒上一些椰丝
放入预热烤箱170烤大约15-20分钟左右至到饼干表面金黄色
cream the butter and icing sugar until fluffy
add in lightly beaten egg and continue to cream until fluffy
add in flour, rice flour and shredded coconut and mix well
scoop into the piping bag
pipe out onto the mini paper cups
sprinkle some shredded coconut on top
bake in pre heat oven at 170C for about 15-20 minutes 
or until golden brown on top

花生角仔 Mini Kacang Puff

传统的花生角子这可是我最拿手的
我是在中学的家政课学来的耶!
妈妈学会了做还做来卖赚了不少红包钱呢!
现今外面所卖的都“硬棒棒”的而且里面的花生馅料少得可怜。。。哈哈!
材料Ingredients:
普通面粉 300g  all purpose flour
牛油/奶油(室温下化) 150g 
butter/margarine (room temperature)
少许盐 a pinch of salt
适量的冰水 ice water

将面粉放入一个大碗里
加入牛油再面粉里慢慢的切小块状
然后用双手轻轻的将牛油与面团弄成松散的粒状
接着就用双手轻轻将松散粒状面团举起大约1-2分钟
让空气渗入其中
然后慢慢的加入冰水揉成软面团
将面团包入保鲜膜内或放入大碗盖上保鲜膜
放入冰箱大约30分钟
取出杆平切出小圆饼团
再杆平放在角仔模上
加入适量的花生馅料
夹紧后再用手捏边
热油锅中火转小火将角仔炸成金黄色
place the flour in a big bowl
add in the butter and cut it into smaller piece into the flour 
use the finger tips to mix in the butter and flour 
and form smaller pieces mixture
graduately add in the ice water and form a soft dough
place into a big bowl and keep in the refrigerator for about 30 minutes
roll out the dough flat and cut out small round shape 
roll flat and place on top of the mould
add in the kacang mixture and clip tightly
make the puff edges 
deep fry in medium to small heat until golden brown

花生馅料kacang puff ingredients:
花生炒香去皮搅成花生末
加入适量炒香的芝麻和适量的幼糖拌匀即可
roasted ground peanut, right amount of lightly saute sesame seed
and right amout of caster sugar mix well

烧肉炒黄面 Fried Yellow Mee with Roast Pork

材料Ingredients:
黄面1包
烧肉切丁1碗
蒜片
洋葱末
鸡汤适量
鸡蛋2粒
香葱段
黑酱油适量
料酒,麻油,盐和胡椒粉适量
1 packet yellow mee
1 bowl diced roast pork 
slice garlic
minced shallot
chicken stock 
2 eggs
spring onion
black thick soy sauce
shao xin wine, sesame oil, salt and pepper 

将鸡蛋打散加少许盐和胡椒粉
以热油煎成蛋饼,待冷切条状
lightly beaten egg add in salt and pepper to taste
fry the egg with hot oil until golden brown outside
cold off the omelette and cut into small slices

热油锅将蒜片和洋葱末爆香
加入烧肉丁翻炒
然后加入黄面再快速翻炒
加入适量黑酱油,鸡汤再快速翻炒
再加入料酒,麻油,盐和胡椒粉调味
最后加入蛋丝和香葱段翻炒拌匀
heat oil in wok and stir fry the slice garlic and shallot
add in diced roast pork and stir fry for 1 minute
then add in yellow mee and stir fry 
add in black soy sauce and chicken stock
then add in shao xin wine, sesame oil, salt & pepper to taste
lastly add in sliced fried egg and spring onion stir fry and mix well

黑芝麻德国酥 Black Sesame German Cookies

今天把传统的德国酥饼换新口味加了黑芝麻粉
同时也要将马铃薯粉和面粉的份量调转 
搅拌均匀的粉团也觉得比较好没那么黏
烤好的饼干口感比传统德国酥饼好
改天再试用这个份量来弄德国酥饼
应该会很好吧!

材料Ingredients:
牛油 250g butter 
糖粉 80g icing sugar
马铃薯粉 200g potato starch
面粉 150g  flour
黑芝麻粉 4 teaspoons black sesame powder 

把牛油和过筛的糖粉用搅拌机搅匀
加入马铃薯粉, 面粉和黑芝麻粉拌匀成面团
把面团装入挤花袋中
挤入迷你纸杯
放入预热170C 的烤箱烤15-20分钟
cream butter and icing sugar until fluffy
add in potato starch, flour and black sesame powder and mix well
scoop into the piping bag
pipe out onto the mini paper cups
bake in pre heat oven at 170C for about 15-20 minutes

奇怪海鲜酒家 Citta Mall Ara Damansara

奇怪海鲜酒家终于开张了!
新的分店在Ara Damansara Citta Mall,
比起PJ23的奇怪海鲜酒泊车实在方便,
也更靠近我们住的地方。
喜欢这酒家的菜肴虽然价钱稍微贵了一点,
不过色香味具全,还是很值得的!
黑胡椒牛肉~还是第一次点这道菜,
通常我们都会点蒙古羊仔骨,今天就换个口味吧!
没有后悔点这黑胡椒牛肉,就好像在吃牛排,
将牛排切成小小块,配着蒜片,嫩香的口感超好!

BBQ Sotong烤苏东~简简单单的烧烤,
好新鲜的苏东,又脆又嫩还香喷喷。

娃娃菜~我们的爱!

哇!这个更棒!豉油王虾
好大好新鲜的虾哦!好吃得不得了!

黑芝麻面包 Black Sesame Bread

哇!整屋子都是芝麻香哟!
终于买到黑芝麻粉了,等了好久才有货
又可以开始我的黑芝麻烘焙里程。。。哈哈!
这小面包超软再加上黑芝麻的香味,
不必涂牛油或果酱也很好吃。

材料Ingredients:
高筋面 300g high protein flour
黑芝麻粉 2 tablespoons black sesame powder
幼糖 1 tablespoon sugar
干酵母 2 teaspoons dry yeast
少许盐 a pinch of salt
奶粉 1 tablespoon milk powder
软化奶油 2 tablespoons soft butter
冷豆浆 150ml cold soya milk

高筋面粉,黑芝麻粉,糖,奶粉,盐及酵母一起混合
慢慢加入冷豆浆搅拌面团,然后加入软化奶油
将面团搅拌至光滑及有弹性,盖着发酵1-2小时或双倍大
将面团放气摺叠松弛20分钟
整形排在已扫牛油的烤盘上
发酵40-60分钟或双倍大
预热烤箱180度烘烤15分钟
add all black sesame powder, high protein flour, 
sugar, salt and yeast into the mixing bowl
slowly add in cold soya milk, beat to form a dough
add in the butter and beat until smooth 
remove the dough and cover with big bowl 
and let rise for at 1-2 hours or double the size
punch the dough and roll flat and fold up 
and rest for another 20 minutes
roll out the dough, form the shape you want
place in the greased baking pan
let rise for 40-60 minutes or double the size 
bake at 180 for about 15 minutes
until the bread is brown on top and sound hollows when tapped
