茄子烧芋头 Braised Eggplants W Yam


身为“师奶”最头痛的应该是烧菜,
每天一早就在想煮什么菜啊?煲什么汤啦?
符合大家的口味吗?这些问题天天都在脑子里出现。
冰箱里还有一大块芋头,
前两天也买了茄子,
想着想着。。。好吧!就来个茄子烧芋头。
从来没有试过这样的搭配煮
法,心里正在想味道会是怎样呢?

哗!结果终于揭晓了,
很香,茄子和芋头的软度刚刚好,口感超棒哟!
最重要的是老爷子喜欢。。。嘻嘻!

材料Ingredients:
嫩茄子(切小段) eggplant (cubed)
芋头(切小段) yam (cut into small pieces)
辣豆瓣酱 1 tablespoon spicy taucu bean paste
蒜末和洋葱末 minced garlic & shallot
辣椒丝 sliced chili
香菜 coriander 
绍兴酒胡椒粉 
shao xin wine, salt, pepper & sugar 

芋头稍微煎炸片刻盛起备用
热油锅,加入蒜末和洋葱末炒香
然后加入辣豆瓣酱辣椒丝再炒香
加入茄子翻炒片刻
之后加入炸过的芋头再翻炒片刻
入适量的胡椒粉调味
再加入适量水煮滚
然后转小火焖煮茄子芋头
最后加入香菜沾点绍兴酒拌匀即可上碟
pan fry the yam cubed and set aside
heat oil in wok, stir fry minced garlic and shallot
add in spicy taucu bean paste and liced chili 
and stir fry for about 1 minute
add in eggplants and stir fry for another 1-2 minutes
then add in fried yam cubed and mix well
then add in salt, pepper and sugar to taste
add in some water and bring it to boil
turn to low heat and braise until eggplant and yam soft
lastly add in coriander and sprinkle some shao xin wine mix well
