铁板苦瓜炒鸡 Pan Fried Bitter Gourd Chicken

老公妹妹送了一个Happy Grill Pan给我
想买很久了就是过于昂贵,始终买不下手哦!
好开心收到这份礼物。。。嘻嘻!
过完了农历新年终于开炉了
先来个铁板炒鸡吧!
老公赞味道很好,鸡肉很入味而且不油腻。

材料Ingredients:
鸡肉(切小块) chicken (cut small pieces)
苦瓜(切小块)  bitter gourd (cut small pieces)
指天椒 2 pieces chili padi
豆瓣酱 1 tablespoon taucu paste
黑豆豉 1 tablespoon black bean 
蒜片及洋葱末 sliced garlic & shallot
香葱切段 sliced spring onion

调味料 seasoning:
麻油耗油老抽和绍兴酒
sesame oil, oyster sauce, thick soy sauce, salt and shao xin wine

用盐,胡椒粉,少许黑酱油麻油和薯粉腌制花肉大约30分钟
烧热油锅,放入蒜末和洋葱末爆香 
加入豆瓣酱黑豆豉小辣椒翻炒香 
然后加入鸡肉炒大约1-2分钟
再加入苦瓜
然后加入适量至熟苦瓜变软
最后调味及加入香葱拌匀即可
marinate the chicken cube with salt, pepper, black soy sauce, 
sesame oil and corn starch for about 30 minutes
stir fry minced garlic and shallot with hot oil
add in taucu paste, black bean and chili stir fry for 1 minute
add in the chicken cube and stir fry for another 1-2 minutes
then add in bitter gourd and stir fry 
fry until the chicken is cooked and bitter gourd is soft
lastly add in salt and shao xin wine to taste
add in spring onion and mix well and serve hot
