葱烧红枣鱼 Spring Onion Red Snapper

看了MAY姐有请的节目,
宁波人吃鱼的煮法,
也让我copy了这个煮发来弄一道鱼的食谱。
我稍微改过煮法,煮出来的味道真棒,
老爷子赞不绝口。。。开心喔!
我还加了几块新鲜的鱼饼,味道更加鲜甜!

材料Ingredients:
红枣鱼 red snapper
蒜粒 (稍微排扁) garlic (lightly smashed)
葱段 spring onion 
芫荽 coriander

调味料seasoning: 
豉油皇 4 tablespoons soy sauce
老抽 1 tablespoon black soy sauce
绍兴酒 1 tablespoon shao xin wine
糖 1 teaspoon sugar
少许 salt to taste
1碗 water 1 large bowl

鱼入锅煎至两边金黄后盛出
锅加入蒜粒然后将葱段放在蒜粒上
将煎好的鱼放在葱段上
加入调味料及水盖上
小火焖烧15分钟
稍微收干汁即可
deep fry the fish both side until golden brown
in the wok, place the garlic and spring onion on top the garlic
then place the fried fish on top of the spring onion
add in all seasoning and water
covered and braise with low heat for about 15 minutes
thicken the sauce and serve hot
