海绵质香蕉蛋糕 Spongy Banana Cake


这海绵质香蕉蛋糕非常好吃
不油腻很松软比一般用奶油弄的香蕉蛋糕好吃得多

材料Ingredients:
粟米油 100g corn oil
鸡蛋 3 eggs
砂糖 100g caster sugar
香蕉香精 1/2 teaspoon banana essence 
熟的大香蕉 2 ripe mashed bananas 
面粉 150g flour
发粉 1/2 teaspoon baking powder
苏打粉 1/4 teaspoon baking soda

鸡蛋香蕉香精用打蛋器拌打
一直打发到提起打蛋器,滴落的蛋液不会马上消失
加入香蕉泥搅拌均匀
然后慢慢加入面粉,发粉苏打粉拌匀
最后加入粟米油轻轻拌匀
然后用勺子舀入杯子或烤盘
在预热烤箱180度烘烤大约30-40分钟 
使用蛋糕测试仪来测试烤熟的蛋糕
如果蛋糕测试出来干净
蛋糕即可出炉
cream egg, sugar & banana essence till light and stiff
add in mashed bananas and mix well
fold in sifted flour, baking powder & soda bicarbonate and mix well 
lastly add in the corn oil mix well
fill up the cup about 80% full 
and bake at 180C for about 35-40 minutes
or and a toothpick inserted into cake and comes out clean
