烤东炎黑鲳鱼 Baked Tom Yam Black Pomfret

材料Ingredients:
黑鲳鱼一条 1 black pomfret fish
茄子一条切小块 1 medium diced tomato
番茄一粒切小块 1 large diced eggplant
大洋葱一粒切小块 1 medium sliced big onion
三汤匙东炎酱 3 tablespoons Tom Yam paste
香茅三条切碎 3 chopped lemongrass 
香葱少许 sliced spring onion
姜丝少许 sliced ginger
蒜末 minced garlic 
辣椒丝 sliced chili
以盐,姜末和糖腌鱼

marinate the fish with salt, ginger and sugar 
将腌制好的鱼放在铝箔上
(足以包整条鱼)
place the marinated fish on the aluminium foil 
(enough to cover the whole fish)

烧热一汤匙食油
加入蒜末,姜丝炒1分钟
加入大洋葱和东炎酱再炒1-2分钟
加入切碎的香茅,辣椒丝和一些水
再加入茄子,大火翻炒1-2分钟
然后倒在鱼上,放入番茄块和香葱
heat one tablespoon of cooking oil in pan
add in the minced garlic, sliced ginger and stir fry for 1 minutes
add in the big onion and tom yam paste and fry for another 1-2 minutes
add in the chopped lemongrass, sliced chili and some of water
add in eggplant and simmer for 1 minutes
pour the tom yam mixture onto the fish
add in the diced tomato and sliced spring onion

将它包好放入烤炉以200C烤大约10-15分钟
wrapped up the fish and bake in the preheat oven at 200C
for about 10-15 minutes or until the fish is cooked
