有机紫薯叉烧包 Organic Sweet Purple Potato Char Siew Bau


紫薯面团材料Sweet Purple Potato Dough Ingredients:
包粉 150g bau flour 
紫薯泥 80g mashed sweet potato 
砂糖 1 tablespoon sugar 
干酵母 1 teaspoon instant yeast 
发粉 1/2 teaspoon baking powder
温水 80ml warm water

紫薯煮熟压成泥
把紫薯泥和所有材料放入搅拌盘混合均匀
慢慢地加入温水搅拌至柔软和光滑的面团
待发至少45分钟
steam the sweet potato and smash with fork 
& form mashed sweet potato
mix the mashed sweet potato & all ingredients together 
add in warm water slowly and knead/beat well 
to form a soft and smooth dough
rest for at least 45 minutes 
普通面团材料Normal Dough Ingredients:
包面粉 200g bau flour
砂糖  1 tablespoon sugar
干酵母 1 teaspoon instant yeast
发粉 1/2 teaspoon baking powder
5温水 100ml warm water

把所有材料放入搅拌盘混合均匀
慢慢地加入水搅拌至柔软和光滑的面团
待发至少45分钟
将面团杆平然后重贴在一起
卷去切小块再翻上来杆圆形
包入叉烧馅料形成包子
待发30分钟,用大火蒸15分钟即可 
mix all ingredients together 
add in water slowly and to form a soft and 
rest for at least 45 minutes 
roll out the two portions of dough
roll out flat and place on top of each other
roll up and cut into smaller pieces
turn it upside down and roll into round shape
leave to rise for another 30 minutes 
steam over high heat for 15 minutes

馅料材料Char Siew Bau Ingredients:
叉烧肉粒  diced Char Siew 
叉烧酱 1-2 tablespoons Char Siew sauce 
蚝油, 生粉, 麻油, 生抽, 盐及白胡椒粉适量 
oyster sauce, sesame oil, soy sauce, salt and pepper 
白砂糖 2 teaspoons sugar 
香葱粒及香菜少许 diced spring onion & parsley 
蒜末及洋葱末 minced garlic & shallot

热油锅加入蒜末及洋葱末炒香
加入叉烧肉粒及叉烧酱粒再炒香 
然后加入白砂糖, 蚝油,  麻油, 生抽, 盐及白胡椒粉调味 
最后加入香葱粒及香菜拌匀炒香即可 
沥干油待冷才包入包子
heat oil in wok add in minced garlic & shallot stir fry 
add in diced char siew & char siew sauce stir fry for 1-2 minutes 
add in sugar, oyster sauce, sesame oil, 
soy sauce, salt and pepper to taste 
lastly add in diced spring onion & parsley mix well 
drain off the oil and cool off before use

东炎虾 Tom Yam Prawns


材料Ingredients: 
大虾8只 8 pieces big prawn
黄椒和青椒切小块 diced green & yellow pepper
大洋葱一粒(切片) 1 sliced big onion
东炎酱2汤匙 2 tablespoon Tom Yam paste
香茅2条(切小段) 2 chopped lemongrass
香葱少许 diced spring onion
辣椒丝 sliced chili 
蒜末和洋葱末 minced garlic & onion

以胡椒粉,料酒和糖腌制大虾
marinate the prawns with pepper, shao xin wine and sugar

锅里烧热2汤匙食油
加入 蒜末和洋葱末 ,姜丝炒香
加入大洋葱和东炎酱再炒1-2分钟
加入香茅,番茄,辣椒丝和适量的水
再加入大虾 ,大火翻炒1-2分钟
heat 2 tablespoons of cooking oil in wok
add in the minced garlic & onion, sliced ginger stir fry for 1 minute
add in the big onion and tom yam paste and fry for another 1-2 minutes
the add in the lemongrass, tomato, sliced chili and some of water
lastly add in the prawns and fry for another 1-2 minutes

椒葱咖哩五花腩 Pepper Onion Pork Belly Curry


材料Ingredients: 
五花腩切块 pork belly (cut smaller pieces)
加入料酒,酱油,胡椒粉,盐,
肉咖哩粉拌匀腌制大约2-3小时 
mix in shao xin wine, soy sauce, thick soy sauce, salt
pepper and meat curry powder and marinate for about 2-3 hours

黄椒,绿椒,小辣椒,洋葱切成大块
香茅, 咖喱叶, 咖喱香料2汤匙
蒜末及洋葱末 
椰奶半碗
水适量
yellow pepper, green pepper, chili, onion (cut into big pieces)
lemongrass, curry leaves, diced spring onion & parsley
2 tablespoons curry paste
minced garlic & onion
1/2 bowl coconut milk & water

下3汤匙食油烧热镬
加入 蒜末及洋葱末翻炒至香
再加入大洋葱块翻炒至香
加入咖喱粉翻炒几下
然后加入五花腩 再翻炒几下
加入咖喱叶, 香茅及小辣椒翻炒
再加入椰奶和水以小火焖煮至五花腩]软
最后加入适量的盐调味即可
Heat 3 tablespoons cooking oil in wok
stir fry the minced garlic & onion
add in diced big onion and stir fry
add in curry paste and stir fry for 1 minute
add in pork belly and stir fry for another 2-3 minutes
add in curry leaves, lemongrass, chili padi
stir fry for another 1 minute and mix well
add in coconut milk and water
with low heat simmer until pork belly is tender

海南鸡排 Hainanese Chicken Chop


海南鸡排是我爸爸的拿手菜
从小就很荣幸的吃到这传统的海南鸡排

材料Ingredients:
鸡腿两只 (起骨和敲打成鸡排)
2 chicken tight
(deboned and pounded to medium thickness)

青龙椒(切块) 1/2 green pepper (cubed)
黄龙椒(切块) 1/2 yellow pepper (cubed)
大洋葱(切块) 1 big onion (sliced)
青豆 1/2 bowl green peas 
番茄酱 6 tablespoons tomato sauce
辣椒酱 3 tablespoons chili sauce
香葱及香菜 some spring onion & corainder
黑胡椒粉 1/2 teaspoon black pepper
五香粉 1/4 teaspoon five spice powder
麻油 1/2 teaspoon sesame oil
绍兴酒 1 teaspoon shao xin wine
盐少许 salt 
鸡蛋(稍微打散) 1 egg (lightly beaten)

以黑胡椒粉,五香粉,绍兴酒 ,麻油和盐腌制鸡排大约一小时

炸之前将打散的蛋淋在鸡腿上
热油煎炸鸡排炸约5-7分钟
至表皮酥脆且呈现金黄色时即捞起沥油
marinate the chicken tights with black pepper
five spice powder, sesame oil, shao xin wine
and salt for at least 1 hour
add the lightly beaten egg onto the chicken tight before fry
fry the chicken tights for about 5-7 minutes until golden brown

热油 炒香大洋葱
加入其它材料稍微炒一下
然后加入番茄酱和辣椒酱 
盐适量再加入适量的水 
将酱汁淋上炸好的鸡排即可 
fry the sliced big onion for 1 minute 
add in all other ingredients and 
then add in tomato sauce & chili sauce and salt to taste 
add in some water and simmer for about 2 minutes 
pour on top the ready fried chicken tights 
served hot


咖哩牛肉碎 Minced Beef Dry Curry


这道菜可以用来配面包,皮塔饼或白饭
它也可以当配料如用来炒饭或炒菜
更可以弄咖哩牛肉碎酥饼, 又酥脆口感超棒的!

材料Ingredients:
牛肉碎 250g minced beef
干咖喱香料 4 tablespoons of dry meat curry paste
香茅 2 lemongrass 
咖喱叶少许 some curry leafs
香葱及香菜 spring onion & coriander 
蒜末及洋葱末 minced garlic & shallot
大洋葱(切碎) 1 big onion (diced)
小辣椒(切碎) 2 chili padi (diced)
盐和胡椒粉 salt & pepper to taste
水适量some water 

下3汤匙食油烧热镬
加入 蒜末及洋葱末翻炒至香
再加入大洋葱碎翻炒至香
加入咖喱粉翻炒几下
然后加入牛肉碎再翻炒
加入香茅, 小辣椒, 香葱及香菜翻炒
最后加入适量的盐和胡椒粉
翻炒2-3分钟至牛肉熟即可
加一些水再炒干
沥干油待冷
盛装入密容器
Heat 3 tablespoons cooking oil in wok
stir fry the minced garlic & shallot
add in diced big onion and stir fry
add in curry paste and stir fry for 1 minute
add in beef and stir fry for another 2-3 minutes
add in curry leaves, lemongrass, chili padi, spring onion and parsley
stir fry for another 1 minute and mix well
lastly add in salt and pepper to taste
add some water and stir fry until dry 
drain the access oil and cool off
keep in air tight container and refrigerated

柠檬乳酪黄油蛋糕 Lemon Cream Cheese Butter Cake


材料Ingredients:
黄油 200g butter
细砂糖 160g caster sugar 
奶油乳酪 200g cream cheese 
蛋黄 4 egg yolk
柠檬皮屑(取自1粒柠檬) lemon zest (from 1 lemon)
200克面粉+发粉一茶匙+盐1/4茶匙
200g cake flour +1 teaspoon baking powder+1/4 teaspoon salt
蛋白 4 egg white 
柠檬汁(取自1粒柠檬) lemon juice (from 1 lemon)

将黄油和奶油乳酪搅拌至蓬松
加入糖搅拌至蓬松
慢慢加入打散的蛋黄柠檬皮屑
再搅拌至蓬松
然后加入面粉拌匀
将蛋白和柠檬汁打到硬性发泡
把蛋黄糊和蛋白两者轻轻拌匀 
倒入抹了油的烤盘
在预热烤箱170度烘烤大约30-40分钟
直到顶部金黄色
使用蛋糕测试仪来测试烤熟的蛋糕
如果蛋糕测试出来干净 
蛋糕即可出炉 
cream butter and cream cheese with an electric mixer until smooth 
add in sugar and cream until fluffy 
add egg yolk one at a time and add in lemon zest cream well 
fold in the flour + baking powder + salt 
beat egg whites until foamy 
then add in lemon juice and beat till soft peak 
fold in half of the egg whites into the egg yolk mixture and mix well 
then add in the other half and mix them evenly 
then pour the mixture into the greased baking pan 
Bake in preheat oven at 170C for about 30-40 minutes

正在准备出发去打一场十八洞的高球

最近球技进步了好多好开心的
超过八年了, 再不把球打好就应该把球鞋挂起来了哟!
太阳公公也听到我要去打球, 带着笑脸出来跟我say嗨!

二零一二年六月二十一日天乌乌的早上

天乌乌的早上心情也要乌乌吗?

有想吃粽子的早上, 等下就去找妈妈要爱心粽子
妈妈的粽子当然充满着爱心啦!
妈妈今年已经八十岁了呀, 还可以包粽子给大家吃叻!
妈妈真伟大...但愿妈妈活得快乐健康就好, 谢谢妈妈.
在过两天就是端午节了, 在面子书的wall都挂满了各式各样的粽子
看着也开心的, 原来还有那么多年轻人懂得包裹粽子, 感觉好温馨.

预祝大家端午节快乐! 
记得要吃粽子啊

今早一上面子书还收到好多好多的生日祝福, 心情也大好起来
从昨天到今早就已经收到超过四百个生日祝福, 哇! 真吓了一跳哦!

我这个人是超爱太阳公公啦
每天早上只要和太阳公公说声"嗨"心情就格外好
很多朋友都说我傻傻的女孩子怎么会爱上太阳公公...哈哈!
爱就是爱呀, 尤其是在打高球最好有太阳公公陪伴
先去准备弄杯子蛋糕, 
希望漂亮的蛋糕能让我心情好起来哟

天气好多了, 一早太阳公公终于出来对我笑一笑,
心情也特别的好起来啦! 
希望接下来的这一个星期可以保持着这么好的早上.
早上就够了, 至少半天人的心情好就够啦!
做人吗不要有太多的要求, 
只要好好的珍惜眼前所有的一切,

咖哩土豆鸡肉餐包 Curry Chicken Potato Buns

材料Ingredients:
高筋面粉 250g high protein flour
白油 2 teaspoons shortening
幼糖 2 tablespoons sugar
酵母 1 teaspoon dry yeast
鸡蛋 1/2 egg
奶粉 1 tablespoons milk powder
冷鲜奶100ml cold fresh milk
牛油 2 teaspoons butter

高筋面粉,白油,糖,半粒鸡蛋,奶粉及酵母一起混合
慢慢加入冷鲜奶搅拌面团, 然后加入牛油
将面团搅拌至光滑及有弹性
用大盘盖着发酵1-2小时或双倍大
将面团分成12份,揉成圆形状,松弛20分钟
把面团压扁成圆形,包入咖哩土豆鸡肉馅料
排在已扫牛油的烤盘上
发酵40-60分钟或双倍大
刷上蛋液/淡奶,洒上芝麻
预热烤箱180度烘烤15分钟
add all high protein flour, shortening, sugar, milk powder, 
1/2 egg and dry yeast into the mixing bowl 
slowly add in cold fresh milk beat to form dough
lastly add in butter and beat to form a smooth dough
remove the dough and cover with big bowl 
and let rise for 1-2 hours or double the size
divide the dough into 12 portions
round the dough into ball shape
and rest for another 20 minutes
roll out the dough, wrap in the chicken curry mixture
place in the greased baking pan/baking cup 
let rise for 40-60 minutes or double the size 
brush with egg/evaporated milk
bake at 180 for about 15 minutes

椰奶Cendol燕菜 Coconut Cendol Agar Agar


底层材料 lower layer 
青色素燕菜粉 1 packet green colouring agar agar powder
糖 6 tablespoons sugar
水 1000ml water
班兰叶 pandan leaf

将燕菜粉,糖,水,班兰叶全倒在锅内煮滚
boil the water in a pot together with agar agar powder
add the pandan leaf and sugar 
stir constantly and bring to boil
remove the pandan leaf

椰奶Cendol上层 coconut cendol layer
燕菜粉 1 packet agar agar powder
糖 6 tablespoons sugar
椰奶 250ml coconut milk
水 600ml of water
班兰叶 pandan leaf

将燕菜粉,椰奶,糖,水,班兰叶全倒在锅内煮滚
boil the water in a pot together with agar agar powder
add the pandan leaf, sugar and coconut milk
stir constantly and bring to boil and remove the pandan leaf

先倒入椰奶燕菜底层至燕菜模的一半
拌入cendol拌匀
凝固后倒入青色燕菜,冷却后放入冰箱
fill up the mould in half with coconut agar agar
then add in the cendol and mix well 
let it cool off and make sure the top layer is hard enough
to support the second layer 
add in the top layer gently onto the slightly harden coconut layer
leave it in the refrigerator for about 20 minutes
remove the agar agar gently

福州面干火锅 Hock Chew Mian Gan Hot Pot


材料Ingredients: 
福州面干1大碗
日本大蚝豉2粒
高丽菜1大碗
鸡精粉1茶匙
1汤匙麻油
盐和胡椒粉适量
火锅料1大碗
香葱粒及香菜末
鸡蛋1粒(稍微打散)
1 bowl Hock Chew Mian Gan
2 pieces Japanese dried oyster 
1 bowl cabbage
1 teaspoon chicken stock powder
1 tablespoon sesame oil
salt and pepper
1 bowl mixed steamboat ingredients
diced spring onion and parsley
1 egg (lightly beaten)

(福州面干弄大片稍微泡过温水除去粉末倒去水) 
(soak the Hock Chew mian gan in warm water 
to get rid of the powder & drained) 

先煲汤, 加入 高丽菜, 鸡精粉及麻油一起煮滚
然后加入蚝豉, 香葱粒及香菜末
再加入适量的盐和胡椒粉调味
最后加入火锅料及福州面干煮滚
慢慢的加入打散的蛋, 加入时一直搅拌弄成蛋花
上桌前撒上香葱粒及香菜末 
first boil the soup, add in cabbage, chicken stock powder
and sesame oil then bring to boil
add in dried oyster, diced spring onion and parsley
then add in salt and pepper to taste
lastly add in mixed steamboat ingredients and bring it to boil 
add in lightly beaten egg 
sprinkle the spring onion and parsley before serve 




金甜薯双色馒头 Two Colour Sweet Potato Man Tou


(1) 金甜薯馒头材料Sweet Potato Man Tou Ingredients:
包面 200g bao flour
金甜薯泥 120g mashed sweet potato
砂糖 2 tablespoons sugar
干酵母 1 teaspoon instant yeast
发粉 1/2 teaspoon baking powder
白油 1 teaspoon shortening
温水 80ml warm water

金甜薯煮熟压成泥
把金甜薯泥和所有材料放入搅拌盘混合均匀
慢慢地加入温水搅拌至柔软和光滑的面团
待发至少45-60分钟
steam the sweet potato and smash with fork 
& form mashed sweet potato
mix the mashed sweet potato & all ingredients together 
add in warm water slowly and knead/beat well 
to form a soft and smooth dough
rest for at least 45-60 minutes 

(2) 白色馒头材料Plain Man Tou Ingredients:
包面 200g bao flour
砂糖 2 tablespoons sugar
干酵母 1 teaspoon instant yeast
发粉 1/2 teaspoon baking powder
白油 1 teaspoon shortening
温水 80-100ml warm water

把所有材料放入搅拌盘混合均匀
慢慢地加入温水搅拌至柔软和光滑的面团
待发至少45-60分钟
将面团杆成长方形重贴在一起
慢慢卷起切成小块翻起向上
待发30-45分钟,用大火蒸7分钟即可
mix all ingredients together 
add in warm water slowly and knead/beat well 
to form a soft and smooth dough
rest for at least 45-60 minutes 
flatten the dough and make long square shape
place the two different colour dough on top of each other
slowly roll up the dough and cut into smaller pieces
turn it upside down 
leave to rise for another 30-45 minutes
steam over high heat for 7 minutes

金甜薯椰子包 Golden Sweet Potato Coconut Bau


材料Ingredients:
包粉 250g bau flour
金色甜薯 150g mashed golden sweet potato
砂糖 2 tablespoons sugar
干酵母 1 1/2 teaspoons instant yeast
发粉 1/2 teaspoon baking powder
温水 100ml warm water

金色甜薯煮熟压成泥
把甜薯泥和所有材料放入搅拌盘混合均匀
慢慢地加入温水搅拌至柔软和光滑的面团
待发至少45分钟
steam the sweet potato and smash with fork 
& form mashed sweet potato
mix the mashed sweet potato & all ingredients together 
add in warm water slowly and knead/beat well 
to form a soft and smooth dough
rest for at least 45 minutes 

揉成长条状切成12-15小块
待发至少20分钟弄平, 包入椰子料包成圆形
用牙签或小刀子割画出南瓜的形状
再以丁香花作为南瓜丁
divide the dough into 12-15 portions 
round it and leave it to rest for another 20 minutes 
flatten the dough and place the filling at the center of the dough 
wrap up the filling and form round shape
use toothpick or small knife to cut the shape of pumpkin
then use the anise as pumpkin tip

待发45分钟,用大火蒸15分钟
熄火让蒸气散开大约5分钟
才将包子取出
leave to rise for another 45 minutes
steam over high heat for 15 minutes
turn off the heat and let the steam cool off about 5 minutes
then only remove the baou

椰子包馅料材料Coconut Bau Ingredients:
嫩椰丝 300g young shredded coconut
黄砂糖 2 tablespoons brown sugar
2汤匙红椰糖(加热水溶化过滤)
2 tablespoons gula melaka (melt in hot water & filter)
班兰叶 pandan leaves
牛油 2 tablespoons butter 

热锅加入牛油煮溶
将嫩椰丝和白砂糖加入翻炒
再慢慢的加入椰糖酱和班兰叶再拌匀
盖上锅盖焖10分钟即可
melt the butter in hot pan
stir fry in coconut and brown sugar
add in melted gula Melaka and pandan leave
stir f and mix well for 1-2 minutes
covered and cook for about 10 minutes

香煎三文鱼配马铃薯沙拉 Pan Fried Salmon with Potato Salad


这是一个非常棒的搭配
简单而传统的香煎三文鱼
再配上马铃薯沙拉
不油腻又健康的一道简单的晚餐或午餐

材料Ingredients: 
三文鱼2大块
柠檬1个
迷迭香及百里香
盐及胡椒粉
橄榄油适量 
2 pieces of salmon
1 lemon
some rosemary and thyme
salt & pepper to taste
olive oil

三文鱼加盐及白胡椒和半个柠檬的汁腌10分钟
平底锅中加入橄榄油,油热后将三文鱼煎至稍黄
再翻面略煎至上色即可
marinate the salmon fish with salt and pepper 
and half lemon juice for about 10 minutes
pan fry the salmon with olive oil/butter until light brown

马铃薯沙拉
Potato Salad

材料Ingredients:
马铃薯4粒
柠檬汁及柠檬末(取自半粒柠檬)
盐适量
橄榄油适量 
香菜末
4 potato
lemon juice and lemon zest (from half lemon)
salt to taste
olive oil
some parsley

将马铃薯加入盐煮熟(不要太软)沥干水分去皮切薄片
以适量的橄榄油适撒在温热的马铃薯薄片上
再将柠檬汁及柠檬末淋在温热的马铃薯薄片上
撒上香菜末即可
broil the potato(not too soft)
remove the skin and make thin slice
sprinkle some olive oil on the hot sliced potato
add in lemon juice and lemon zest 
lastly sprinkle some parsley on top and serve hot




鲨丁鱼面包 Sardine Buns


材料Ingredients:
高筋面粉 250g high protein flour
幼糖 2 tablespoons sugar
酵母 7g dry yeast
鸡蛋 1/2 egg
奶粉 1 tablespoon milk powder
冷鲜奶100ml cold fresh milk
牛油 1 tablespoon butter

高筋面粉,糖,半粒鸡蛋,奶粉及酵母一起混合
慢慢加入冷鲜奶搅拌面团, 然后加入牛油
将面团搅拌至光滑及有弹性
用大盘盖着发酵1小时或双倍大
add all high protein flour, shortening, sugar, milk powder, 
1/2 egg and dry yeast into the mixing bowl 
slowly add in cold fresh milk beat to form dough
lastly add in butter and beat to form a smooth dough
remove the dough and cover with big bowl 
and let rise for 1 hour or double the size

将面团分成9份,揉成圆形状,松弛20分钟
把面团压扁成圆形,包入沙丁鱼馅料
排在已扫牛油的烤盘上
发酵40-60分钟或双倍大
刷上蛋液/淡奶,洒上芝麻
预热烤箱180度烘烤15分钟
divide the dough into 9 portions
round the dough into ball shape
and rest for another 20 minutes
roll out the dough, wrap in the sardine mixture
place in the greased baking pan/baking cup 
let rise for 40-60 minutes or double the size 
brush with egg/evaporated milk
bake at 180 for about 15 minutes

沙丁鱼馅料Sardine ingredients:
1罐沙丁鱼(弄烂) 1 can sardine (smashed)
香葱香菜许 diced spring onion & coriander
盐及胡椒粉适量 salt and pepper to taste
小洋葱少许(切碎) chopped shallot
辣椒(个人喜好) chili (optional)

将全部馅料混合均匀
mix all ingredients together

一品粥锅 Porridge Hot Pot


这可是老少咸宜的粥锅
在家也可以自己煮
我们在餐厅吃的粥锅当然不比自己煮的好料
而且比较健康又便宜多了
自己煮可以加上等好料也可以来个"斋粥锅"
至于蔬菜方面可以加入个人喜爱的青菜

材料Ingredients: 
1杯白米
大蚝豉3粒(切小粒状)
腐竹1片(煲汤水用的)(弄小片稍微泡过温水)
枸杞少许
1汤匙麻油
姜丝少许
盐和胡椒粉
苦瓜片一小碗
火锅料1大碗
香葱粒及香菜末
鸡蛋1粒(稍微打散)
1 small cup rice
3 pieces dried oyster (diced)
1 piece fu chok (make smaller pieces and soak in warm water)
some wolfberry 
1 tablespoon sesame oil
sliced ginger
salt and pepper
1 bowl sliced bitter gourd 
(can use any other green vegetables)
1 bowl mixed steamboat ingredients
diced spring onion and parsley
1 egg (lightly beaten)

先煲粥, 加入腐竹片, 蚝豉粒, 枸杞, 姜丝, 麻油一起煮滚
然后加入一半的香葱粒及香菜末
再加入适量的盐和胡椒粉调味
最后加入火锅料和苦瓜片煮熟
慢慢的加入打散的蛋, 加入时一直搅拌弄成蛋花
上桌前撒上香葱粒及香菜末 
first boil the porridge
add in fu chok, dried oyster, wolfberry
sliced ginger, sesame oil and bring it to boil
add in some diced spring onion and parsley
then add in salt and pepper to taste
lastly add in mixed steamboat ingredients and 
sliced bitter gourd and bring it to boil and cooked
sprinkle the spring onion and parsley before serve
