砂锅豆豉焖苦瓜鸡 Claypot Black Bean Bitter Gourd Chicken

今天来一道 ~ 砂锅豆豉焖苦瓜小鸡腿
这是用了黑豆豉焖煮的
我知道好多人都不太喜欢黑豆豉的味道
尤其是男生,还好我老公还蛮喜爱它的味道
经常在外面也有点和黑豆豉的菜肴
老公也赞不绝口的!
我个人也蛮爱黑豆豉的味道
焖或蒸排骨啦!蒸鱼啦!焖煮猪肉啦!
还有用来炒麦菜,苦瓜及帝王苗也很入味很好下饭哦!

材料Ingredients:
小鸡腿 6 small drumkstick
苦瓜半条(切块) 1/2 bitter gourd (cubed)
黑豆豉2汤匙 2 tablespoons fermented black bean 
蒜末和洋葱末 minced garlic and shallot
姜片 sliced ginger
红辣椒丝少许 slice chili
香葱粒香菜少许 spring onion & coriander 
盐适量 salt to taste

调味料seasoning:
生粉,耗油盐,生抽和绍兴酒
cornstarch, oyster sauce, salt, soya sauce and shao xin wine

小鸡腿洗净去水,用生粉,耗油
生抽和绍兴酒腌制大约1-2小时
烧热油锅,爆香姜片放入蒜末和洋葱末炒香 
加入黑豆豉翻炒均匀
倒入小鸡腿再翻炒均匀
加入苦瓜和适量的再加入红辣椒香葱粒香菜
中火焖煮至苦瓜软脆鸡腿熟即可
最后以盐调味转大火稍微收干汁即可
marinate the drumstick with cornstarch, oyster sauce, salt
soya sauce and shao xin wine for at least 1 hour
heat oil in claypot, stir fry the slice ginger
then add in minced garlic and shallot and stir fry
add in the black bean and stir fry
add in drumstick and stir fry and mix well 
then add in bitter gourd and water to cover the chicken 
add in spring onion, chili and coriander
simmer in medium heat until the bitter gourd is soft 
and chicken is cooked
lastly add in salt to taste and turn to high heat
let the sauce dry up a bit
