排骨 (切块) 500g Pork Ribs (diced)
马铃薯 (切大块) 3-4 potato (cubed)
红萝卜(切块) 1 carrot (cubed)

咖喱酱 curry paste
椰奶 200ml coconut milk
蒜末 minced garlic
大洋葱 1 large onion (sliced)

姜片及辣椒丝 sliced ginger & sliced chili
香茅和咖喱叶适量 lemon grass & curry leafs
八角和丁香花 clove & star anise
桔仔汁 (from 1 tangerine) tangerine juice

糖 1/2 teaspoon sugar
盐适量 salt (to taste)
排骨先稍微汤过
热油锅炒香姜片,蒜末和大洋葱
加入咖喱酱炒香
然后加入排骨再翻炒均匀
接着加入适量的水,马铃薯,红萝卜,桔仔汁,
八角和丁香花,香茅和咖喱叶

慢慢的加入椰奶煮滚
加入糖和适量盐, 中火煮至排骨和马铃薯软即可
heat up oil in wok, stir fry in sliced ginger, garlic & onion
add in instant curry paste and stir fry evenly
add in pork ribs and stir fry for 1 minute
then add in the potatoes and carrot
tangerine juice, lemon grass, curry leaf, anise, cloves
then slowly add in coconut milk and bring it to boil
add in sugar and salt to taste
simmer in medium heat for about 20-30 minutes
until the pork ribs is soft and tender
